Dp and dd1 love pies! DD2 and I like pies, but the kinds of pies we all like are rather different. So I'm thinking that I could buy some individual pie dishes and make different pies, but how do I do that without a whole load of faff, please?

Dp and dd2 like meat, so maybe I could stick something meaty in the slow cooker and let it turn itself into a pie filling? As a veggie, though, I have no idea how to do this! Or is there some way I could just buy ready cooked chicken, and somehow turn that into a pie filling?

I like things like spinach and feta, or leek and potato so that's easy to make in just small quantities and no real faff. Any other ideas for faff-free veggie ones?

Please help our pie dreams to come true! Grin

Ratatouille (could add White beans or feta)

Mushroom and cream cheese (we use VioLife non dairy)

Roast veg and hummus

Sweet potato with Asian flavourings - soya sauce, brown sugar, chilli sauce, ginger, coriander

I know cheese and onion has been mentioned, but I made cheese, onion and potato pie for dsd as she's vegetarian. Her Mum loved it too. Dsd loves the cheese onion and potato pie that a tea shop we go to makes. I like it too so thought I'd try to recreate it for her. She prefered mine Smile

I used a block of shortcrust. Buttered a pie tin and rolled out half and lined the pie tin. Simmered a large potato and large onion in milk for 10 mins. Seasoned. Mixed a little milk with a teaspoon of mustard and a bit of paprika, stirred in with potato/onion. Or use any spice/herbs you fancy. Grate 250g strong cheddar. Sprinkle a layer of cheddar on base of pie dish. Add layer of simmered pot/onion, more cheese, then pot/onion, top with cheese then roll out and cover with remaining pastry, sealing edges with beaten egg. Wash the top with egg and bake in oven 190C for 30 mins or thereabouts. Depending on the oven.

Aaargh! As a half-arsed veggie, potato and cheese pie is one of my worst nightmares! "Would you like a slice of stodge and carbs with your veggies?" Wink

I can be more positive and contribute a recipe that I inherited and absolutely love. It's called Pisaladiere and it's somewhere between a pie and a quiche. You fry up onions and garlic, two tins of tommies, a little parsley (sometimes I swap for oregano, both are good). Simmer it for a bit to boil of some of the liquid then set aside and let it get cooler. Then add a decent-sized pile of grated cheddar and two beaten eggs and spoon it into your pie dish. I often top it with some black olives and anchovies, but they're obviously not everybody's thing. Bake in the oven for 30-40 mins and you can serve hot or cold, but cold is IMHO much better.

Mushroom and ale pie (does well as individuals)

Cheese and beetroot (filling also has mayo and pickle - sounds odd but is gorgeous)

Homity pie (also good as one huge pie or little ones)

I can't eat tinned tomatoes - horrible things. Sorry! It sounds good minus the tomatoes and anchovies, though.

I do homity pie, but the dds don't really like it. We're having it today, in fact.

purple it tastes good though and not as if you'd eat it all the time. You don't use lots of potatoes. Your pie would make me heave Wink

The mushroom ones all perfect for dp and I, but the girls won't eat them.

Sorry, Velvet - I love beetroot but that pie doesn't sound tempting. I hate both mayonnaise and pickle though.

Just made my homity-esque pie filling:
potatoes, cheese, leeks, spring onions, spinach, thyme, cream, grainy mustard. It smells so good!

If you like beetroot, you might like this:
A filling with beetroot and feta cheese, it looks amazing when cooked, gorgeous colours and I love the taste. Fill the pastry with slices of cooked beets, make a mixture of 2 eggs, a bit of whole milk, a good helping of crumbled feta. Poor over the beets and bake.
I also love Alzace onion pie, you can make a whole batch of onions and do one with bacon and one veggie.

Thanks, Rhu. I'd probably like the beetroot and feta one, but nobody else would eat it.

Alsace onion = essentially a quiche, I think? I do quiche a lot - but really want proper 'topped' pies.

I do pissaladiere without tomatoes, I caramelise a whole load of sliced onions and use to top a sheet of puff pastry then top with anchovies and black olives.
Obviously you wouldn't use the anchovies but cherry tomatoes would be good or perhaps artichoke hearts.

Taking notes here, I would like a knockout pie recipe - just one Grin, everyone loves the thought of a pie here but they are often disappointing. Could be vegetarian or otherwise (but no peppers, aubergine or courgette as allergies to those).

I made this today - twas very underwhelming.

My homity pie was also underwhelming. It had a soggy bottom. :( The filling was lovely though (except dd2 claims to not like potatoes!).

Brillo - the tart sounds good. Puff pastry tarts are so useful - but I still want proper pie too!

Best pie ever.........courgette and rice filo pie. A recipe from Hugh FW's Veg book.

I only made it to use up sme courgettes, now a firm family favourite.

So the homity pie was soggy bottomed, but the little homity pasties I made (like sausage rolls) were lovely. Maybe individual pasties are the way forward?

I fancy the savoy pie, Serin, but would beat the eggs rather than baking them whole I think (am a bit funny about eggs!).
