I usually use it in chicken tray bake a la Nigella.

Fancy doing something else for a change. Any favourite recipes? Got a Chorizo horseshoe in the fridge waiting to be used.

Chorizo al vino/ Chorizo a la sidra: chorizo in wine or cider
Also called "a la diabla"

For this it's best to use tiny whole chorizos but if unavailable chorizo sliced into chunks can be used. Dry fry chorizo, discard resulting fat. Add Spanish white wine (preferably a dry sherry but any white wine will do) or cider and a bay leaf or two (optional)
Let cook over very high heat to evaporate alcohol. Lower heat and cook for around 15 to 20 minutes until not much liquid is left.
A soft not dried chorizo should be used.
In Spain it's served in earthen ware dishes with lots of crusty bread

In Spain chorizo is mostly added to pulse stews such as Lentejas con Chorizo=lentil stew, Judias con Chorizo=bean stew, patatas con chorizo=potato stew.
Very popular with children Macarrones con Chorizo= maccaroni with chorizo and tomato sauce which can be topped with cheese and grilled

This is one of my favourite evening meals ever. You feel a bit 'huh' at cooking basmati rice as if it was risotto rice the first time round but it works. So. Well.

This is a good stew. I tend to use a red onion, tin of chopped tomatoes instead of bally passata, and half a tin of chickpeas to add a bit of texture.

My DH has also been known to make a bolognaise with chorizo - no mince but lots of veg and a bit of chorizo to add some spice.

I recently added chorizo to bolognaise when I realised I had less mince than I thought. It was AMAZING, made it very rich and a tiny bit spicy. I make bolognaise a lot and will never be going back!

chorizo and butternut squash risotto is nice.
Chorizo sliced lengthways and thin, wrapped round cod and roasted is surprisingly nice.
Stir fried with pimientos de pardon is best of all.

Chorizo makes a lovely jambalaya type dish with onion, celery, green pepper, rice, prawns and chopped chicken breast. Mine usually ends up as a soup as do most of my recipes because I love soup

Chorizo rice:

100g/3½oz chorizo
1 onion, sliced
1 garlic clove, sliced
200g/7oz short-grain rice such as arborio rice
4 tomatoes, roughly chopped
50g/2oz butter
1 tbsp parsley
600ml/20fl oz chicken stock
salt and freshly ground black pepper

Preheat the oven to 180C/350F/Gas 4.
Heat a heavy-based frying pan over a medium heat and fry the chorizo for 3-4 minutes, or until crisp. Remove the chorizo from the pan with a slotted spoon and set aside.
Fry the onion and garlic in the remaining oil for 3-4 minutes, or until soft.
Place the chorizo, onion, garlic, rice, tomatoes, butter and parsley into a well-buttered casserole dish. Season with salt and freshly ground black pepper.
Pour over the chicken stock, cover with a tight-fitting lid and bake in the oven for about 25-30 minutes, or until the rice is cooked.

I read on a blog somewhere "In Hommage to the Chorizo"...
...that the only thing that chorizo DOESN"T go with is custard.

Fry a onion and chorizo and a bit of chilli. Add some cooked new potatoes and a spoon of capers and crush the potatoes and brown off then crack in some eggs, season and pop a lid on till eggs are cooked. It is delicious Smile

Being heathens we add it to pretty much anything. Macaroni cheese with chorizo and foil baked baby tomato is tasty, it's lovely added to spa bold too.
Favourite is bean and tomato stew with chunks of chorizo.

Bollo preñao: chorizo filled buns

Make a bread dough. After it has risen take pieces of dough and place a piece of chorizo on it. Shape as a round bun completely covering the chorizo. Place rolls on baking try, brush with milk and let stand in a warm place for around 20 minutes. Bake in hot oven until golden.
For children a snout, two piggy ears and twirly tail can be made from a bit of dough and stuck on with beaten egg before baking. For the snout cut a circle of dough and with the end of a straw make two little holes. The two little rounds can be the little eyes.

I make chorizo, chicken and leek pie.

Dice and pan fry the chicken dry, add butter then sauté the leeks then add the chorizo. Add some marjoram to your taste.

Make a white sauce. Mix all together and I cheat and make a puff pastry lid from ready to roll stuff. Glaze with egg and stick in the oven for 40 minutes.

Goes well with some mash and veg, gravy is optional but in our house it's not!

This is probably one of my favourite meals

Chorizo mince which is not put into casings is sauteed and served with fried eggs. It can be made at home with minced pork which should be ground coarsly and should not be too lean.
Add crushed garlic, salt and pepper and spanish smoked paprika, if you like you can add some hot paprika as well. Add oregano and if you like a very small amount of white wine (optional) Mix thoroughly and leave covered in fridge for at least 24 hours but better 48 hours
Add to hot frying pan and cook stirring until browned and fully cooked.
Served usually with potatoes, fried eggs and green peppers.
Can be used as filling for pasties

The home made chorizo mince above can be shaped into patties before cooking or used to fill baked potatoes. Also can be served on hot toast.
Another way is once cooked cover with mashed potato and bake like cottage pie

I should have mentioned that I had an inch of chorizo left in the fridge, which I discovered on my search for celeriac to make soup the other day.

Can I just say that it makes an excellent addition to the soup!

There are a couple of rice/prawn/chicken options here already, but the BBC baked Spanish risotto is a good one too - paella-esque risotto with no stirring.

Lamb and chorizo casserole (6).

450-675g lamb shoulder or neck fillet
2 tbsp seasoned plain flour
2 tbsp olive oil
100g chorizo
1 red onion, finely chopped
2 crushed garlic cloves
300ml lamb stock
150ml red wine
1x410g blackeyed peas or butter beans

Brown the Lamb and chorizo, remove and put in casserole dish. In the same pan cook and onion and garlic cloves. Spoon into casserole dish with stock and red wine. Cook at 170 for an hour. 10 mins before end add a tin of butterbeans,

One of my favourite easy meals!

Pork and Chorizo Burgers

These are fab. We have them with half a bun (on the bottom) then the burger with a fried egg on top.

Served with chips deep fried in beef dripping
