What are your favourite one pot dishes?

I'm a lazy cook but still want to make decent food for the family.
I love making bung-everything-in-pot-then-shove-in-the-oven type of dishes.
Im looking for some new ideas so please share any fab recipes you have.

Beef in Guinness is lovely.

Brisket, can of Guinness, stock and loads of root veg. Add herbs as required and slow cook for hours until beef is falling apart.

Thanks for the new thread! My favourite one pots are moussaka & paella.
Store cupboard favourite is spicy sausage, tomato & white bean stew (several variations depending on what's in the fridge sometimes use chorizo instead of sausages, usually add any leftover herbs I have, and good for using whatever veg you have around).

When I have little prep time I just throw some chicken quarters (or DH prefers just thighs & drumsticks) in the oven with chunky diced potatoes, red peppers, red onions, dried herbs & paprika plus bit of olive oil.
Do you have any one pot dishes u'd recommend??

Oven baked risottos are easy - most can be baked in the oven - you just need to make sure that any meat you put in if you put any in will be cooked enough in the time it takes the rice to cook.

Use any recipe for the rough timings to begin with and adapt it to whatever you want to make.

I use whatever I buy on offer!
Usually fillets of coley or cod and salmon. A little goes a long way in that stew. It's really lovely.

Minestrone

Properly it should have a hambone in it, but you can cut up a piece of gammon and be generous.

The celery is essential, otherwise it tastes like vegetable soup.

I'm veggie and I see that most of you like meat, so these may not be of use. I like:
dhal
veggie sausage casserole
lentil soup
veggie chilli
black bean soup
leek and potato soup
any number of curries
layered veggie tagine
big pan of roasted vege - just serve with salad, cheese and minty yoghurt

Nigel Slater one: New spuds, chunkily chopped onion and aubergine, cherry tomatoes. Put in big dish with sprigs of rosemary and drizzle with plenty of olive oil. Bake uncovered for half an hour at 180, stir, then lay on top seasoned,oiled lamb steaks, then bake for a further twenty minutes.

This sounds lovely! Can you elaborate for me as I'm an inept cook! Is this in a baking tray or Pyrex sort of casserole dish? Uncooked potatoes? Covered with foil or not? Does it not dry out with no liquid? How long does it take to cook and how hot??
