What are your favourite one pot dishes?

I'm a lazy cook but still want to make decent food for the family.
I love making bung-everything-in-pot-then-shove-in-the-oven type of dishes.
Im looking for some new ideas so please share any fab recipes you have.

These are 2 of my faves - a rich, flavoursome chorizo, pork & bean stew (Feijoada) and a creamy herb & yoghurt chicken. Both easy, both delicious!

Goulash is a fav in our household, can add dumplings at the end or serve with mashed potatoes.

We do our own variation of Spanish chicken using less Chorizo (sliced) and add various veg in the mix (broccoli, red/green peppers, baby carrots, French beans ... etc) as well as some stock so its more of a stew.

Thanks for bumping this, going to do a chicken and chorizo jambalaya tomorrow!

Tartiflette is a big favourite in our house although we don't bother with wine, we use creme fraiche instead of double cream and we are heathens don't use reblochon but use whatever cheese is lying around in the fridge - good for post-Christmas cheeseboard remnants! Nice with salad and crusty bread.
