Fool proof Brownie recipe anyone?

I need to find a Brownie recipe that works well. All I want is a gooey middle and slightly crispy outside.

Mine either end up a pile of goo or just cake. :(

This is my first world problem, and I need help! Grin

I made a batch for DD (minus walnuts) she;s scoffed a slice and pronounced them to be de-lish.

She had the good grace to eat it away from me though, Bless 'Er Grin

I use 80% dark chocolate for good , dark adult friendly brownies
And less dark 55% for normal Brownies

OK - I made some brownies!!!

I made the smittenkitten cocoa ones (as I had zero dark chocolate in the house) and well.. the jury is out.

They have alovely crisp top and gooey middle. But the bottom is still sticky and gooey. Despite being in the oven for the first 25 mins, and then another 20, and now they've just been turned upside down to try and get them to bloomin' cook! So hopefully that will make then cooked enough.

Despite the uncookedness - they are very nice! so 4 out of 5 for now!

I think it's my oven that is to blame (I'm getting a new one on Wednesday so will have to try again!)

200g dark chocolate (70% cocoa solids)
200g butter
3 eggs
200g caster sugar
150g ground almonds
1 tsp vanilla extract
1-2 tsp salt

Melt the chocolate and butter together, leave to cool. Whisk the eggs and sugar and vanilla together. Add to the cooled chocolate mixture. Add the almonds and salt. Bake on 190 for 25-30 mins.

Perfect mixture of gooey and fudgy in the middle but crunchy on the outside. Really rich and great cold or slightly warmed with ice cream/cream.

I make these for a local charity cafe each week and they are the first to sell out.

antony worrall thompson tripple choc brownies are dead easy, just use 300g dark cheapo choc rather than three different lots and bake for 20 mins in two tins

I've just read this thread and can't believe that Mary's Berry's Best Ever Chocolate Brownies is not listed here. She uses a hint of coffee and that adds a delicious deep rich flavour. I have been baking these for 10 years and always get compliments. Mary also uses margarine and walnuts. I use butter and exclude the walnuts. I also only use 200g of plain choc chips (she uses 250g). I've listed my ingredients here. But her method is in the link. Oh, and I also melt the choc and butter in the microwave - 2.5-3 mins on high, then give it a good stir. Perfect brownies every time!

Ingredients

  • 375g dark choc (I use cheapest I can find)
  • 250g unsalted butter
  • 2 tsp instant coffee
  • 2 tbsp hot water
  • 2 eggs
  • 250g caster sugar
  • 1 tsp vanilla extract
  • 90g self-raising flour
  • 200g plain chocolate chips

I second the BBC goodfood recipe that Moab mentioned. It's great. I never use white chocolate in it though (just more dark chocolate) and O don't use chocolate chips, just chop chocolate up. If you want to do it a bit differently, use some orange infused chocolate (Co-Op do a bar).
