Fool proof Brownie recipe anyone?

I need to find a Brownie recipe that works well. All I want is a gooey middle and slightly crispy outside.

Mine either end up a pile of goo or just cake. :(

This is my first world problem, and I need help! Grin

Bike I got that recipe on MN when I posted about "What The Jeff is him out of GBBO doing whisking the eggs'n'sugar when he's demonstrating KitchnAids? Is it just to sell the mixer?"

I used to use one from The Telegraph but the ingredients were just mixed (and nice enough) but whisked is sublime, and the cocoa tastes velvety.

So that's the one I've used since (and YY it is the same Grin )

But now, I'm gluten free and dairy free so no fecking brownies for me unless I use GF flour and oh, I don't know, dairy free spread or coconut oil

I don't rate the Niger Slater recipe, and I own a Kitchenaid.
My favourite are Nigella's everyday brownies from her Kitchen book, they are just right cake and brownie and fudgey.
Nigel's were heavy and lumpen.

70 - I do the Hummingbird recipe gf using cornflour as a straight swap. Good dark chocolate will be df anyway then use Pure or Vitalite.

I usually recommend the Laura in the Kitchen Fudgy brownies, it's not too frivolous on the ingredients.

HFW Cocoa Brownies are also very lovely...Domestic Sluttery adapted that recipe for After Eight brownies, also delish

This one from Cooking with Kids by Rob Kirby is pronounced to be even better than the Hummingbird one. I leave out the hazelnuts as often baking for school which is nut free.

Made 3 ingredient nutella brownies the other day, haven't chicken clef the links already posted so forgive me if I'm repeating this recipe but they're so lush and easy I just have to!
1 and 1/4 cup nutella, 2 eggs and half a cup of flour. Mix together and bake gas 4. I think if said 15 minutes in recipe but I ended up doing a bit longer cos looked v wobbly and as I had v little experience of baking brownies I didn't know if that was done or not so shoved it back in. Kids and I loved them and ds2 has asked for them for his birthday next month

These are my fave never go wrong even with gf flour and sainsburys basic choc. I agree it's the whisking of eggs and sugar separately. Also these use granulated sugar so extra crunch! SmileSmile

I just tried the Nutella recipe but it was really 'cakey' - like a really dry sponge Confused I didn't even give it the full time said in the recipe, is this normal or did I totally cock it up?

Going to have to make a batch of my favourites now and convince myself that I'll burn off all the calories whisking Grin

I have bought some coconut flour and some DoveFarm GF flour so I'm going to try some recipe tweaking.

And Nigellas Olive Oil cake is good (DF/GF uses almonds)
