What do you have for a casual lunch?

I cook a lot and on Saturday I oftwn just can't be bothered. I batch cook etc but prefer to save that stuff for the times when I fenuinely have no time.

So what do you have on a lazy Saturday if you have small DCS?

Cheese on toast! 1 year old DD loves it. Or soup, easy enough to chop veg, simmer in some water/stock the blitz with the stick blender. We often reheat leftovers too or make bubble and squeak which is another favourite for DD.

DH doesn't eat cheese so a huge amount of easy and delicious doors are closed to me. I usually do a soup of a Saturday but I suppose am bored of it. Nice soup suggestions?

Hot chicken sounds a good idea. Although everyone had toast for breakfast. I need to discourage this so more quick and easy stuff open as lunch options.

Pre roasted chicken ( from shop) and salad, or leftovers and salad.

Most Saturday's we just eat late big breakfast as everyone sleeps in , miss lunch, have bit of fruit late afternoon, then late dinner out with friends

Favourite soups here are curried parsnip or chickpea and lentil. Tuna baguettes are always a winner too.

I know what you mean about having toast for breakfast making it hard to have quick toast-based lunches! We also like avocado and feta on toast, or toast with hummus. Frittata goes down well with DD and is a good way to use up odd bits of veg, cooked potatoes etc

Oh yes frittata a great idea! Although everyone has had bloody eggs for breakfast! Need to insist on porridge and fruit in future I thibk!

No particular ideas but I feel your pain re a non-cheese-eating dh. I have one here and it's amazing how many recipes are automatically out.

No rotisserie chickens at my supermarket! So I've bought one from the butcher, really it's so low effort it's pretty much the same when I'm not doing the rest of the bits and bobs.

Right today hasn't been too healthy bi went to my sisters so couldn't choose lunch.

Breakfast two crumpets
Lunch two sandwich thins one with cheese mayo and salad the other with houmous. Some cherry tomatoes and slices of red pepper
Dinner two fish cakes with stir fry veg and home made sauce.

I bought some gu zillionaire desserts as a weekend treat might have it tonight. They're amazing.

Tuna Melts - tuna, mayo, red onion and capers on thick slices of tiger bread. Topped with slices of tomato and cheese and grilled. Bit of salad on the side and potato wedges if I can be arsed
