Lining cake tin with foil??

Does anyone have any idea why Mary Berry is suggesting I line a tray bake tin with foil?? I've never used, or even heard of using, foil to line a cake tin before and can't imagine why it would be better than baking parchment?

This stuff - I've seen her recommending it on TV. No one mainstream sells it any more, which is a shame because it was great for cooking sausages etc.

Our Sainburys haven't had any for over a year and nor have Tesco. I've ended up buying the bacofoil non stick foil for non-cakey stuff and it rips if you look at it.

Thanks for answers. It doesn't say parchment lined foil, just foil. Any idea why and whether it will end in catastrophe if I ignore her instructions and just use parchment? I'm making the cake now and using foil and then melting butter to grease it just sounds like too much of a faff! I'm feeling lazy...

I've never used anything but parchment/paper for a cake. Do what you'd normally do.

I can imagine that peeling foil off if it sticks would be a real pain.

Victoria Wood used a Mary Berry recipe on bake off recently and she had to line the tin with foil, but also grease the foil (which she omitted to do and the cake stuck to the foil). Not sure why she uses foil instead of parchment though...

I've often lined a tin with foil. Especially if it's an intricately shaped tin like the Wilton ones. You can really press and smooth it into all the nooks and crannies. And if you wait for it to cool and peel carefully then it all comes off smoothly too.

Doesn't the foil affect the cooking somehow though? With foil conducting heat more than baking paper?

In an already metal tin, not much.

If i was doing a fruit cake that would take a while to cook then I'd use parchment but foil is fine for sponge.

Slight thread hijack - but has anyone ever used one of those cake tin sprays? I find lining cake tins such a faff and would love to be able to skip it, but it goes against everything I've ever been taught not to do it!

The spray is expensive, awful and full of additives. I tried it and didn't finish the bottle.

I have just bought some cake cases that look like giant cupcake cases from Poundland they had a full range of baking accessories by Jane Asher. I also hate lining cake tins so am keen to give them a try.
Going to make a Mary Berry Sticky Lemon cake tomorrow so will let you know what they are like.

I buy the spray from Costco, it has nothing but oil in it, is much easier than traditional greasing and works well. www.amazon.co.uk/Kirkland-Signature-Canola-Cooking-2x340g/dp/B005EC0QUS You can use it for loads of stuff too

I guess you could make your own if you buy one if those little spray bottles and put melted butter or oil in it?
