MN Food Menu Planning Challenge Thingy.

I want to get a 2 week menu running, but I know how to cook sod all (I CAN cook, just need recipes and a kick).

I am on a tight budget, so it needs to be as cheap as possible, filling, but healthy.

We all like pretty much everything (apart from the evils of cous cous).

PLEASE can yous who do this kind of stuff come and post oodles of recipes so I can sort a 2 week menu and shopping list?

You are all stars.

(Oh, not opposed to vegi options too)

I used to get my milk delivered too but it was so much more expensive than even the corner shop I had to stop - it was lovely milk though...

kedgeree is a great fish dish and so quick and easy to make, I do a fish pie with a spinach mash for my dd to get the greens into her. Another dead easy one to do and is seasonal so the veg is cheap is roast butternut squash and pumpkin soup with garlic. You roast the squash and pumpkin (cubed and deseeded) bash around 6 garlic cloves (don't peel). Takes about 30-40 mins in oven. Then just liquidise with some chicken stock.

Oh and you can't go wrong with a corned beef hash or a shepherds pie if you need a budget meal. I do a half/half butternut squash/potato mash for the shepherds pie and put in carrots, peas. Ratatouille is a great dish too. And good old omlette and roast potaoes with salad, is a life saver, I always have eggs and pots.

Roast chicken with lemon and garlic on a bed of butternut squash and green beans. Roast chicken with wine, squeeze a lemon over it and put half a lemon and an onion inside. After about 40 mins add bashed garlic cloves still in skin.

Leftover chicken makes a great leek and potato soup. Chop leeks, and pots, add chicken stock (I make my own). Add bacon (lardons best) and chicken. Bring to the boil and simmer for around 30-40 mins on a low heat. Liquidise.

oo one last one, (french mum will approve) and I'll leave you in peace, Provencal Daube, (beef stew for english mummies) use braised beef or stewing beef, chop in biggish chunks. Heat oil in a small Dutch oven over low heat. Add garlic; cook 5 minutes, stirring occasionally. Remove garlic with a slotted spoon, and set aside. Increase heat to medium-high. Add beef to pan; sprinkle salt and pepper. Cook til browning on all sides. Remove beef from pan. Add white wine to pan; bring to a boil, scraping pan to loosen browned bits. Add garlic, beef 3 largish carrots (roughly chopped) 4 x celery (cut in biggish bits 4cmish) 5 fresh chopped tomatoes (peeled),bay leaf, fresh thyme and rosemary. and bring to a boil and simmer gently for around 2 -3 hours. Simple and delicious. - sorry french mum think this is best served with mash..

ignore dutch oven bit i copied and pasted bits, just needs to be in a hard bottomed pan, i use a big frying pan and then add to a large saucepan and cook it all on the hob. right i'll leave u in peace

One of our fave meals is carbonara. 2 eggs/200ml double cream/peas/fried bacon (Parma ham if flush) - mix with pasta, ready in a jiffy.

Home made Jamie veggie pasta sauce (can freeze) with Sainsbury's tortellini (It's always on a 2 for 1 so buy loads of them and freeze).

Fishcakes with sweet potato wedges (DS1 loves this)

shepherd's pie (beef mince)
