Toddler-proof gingerbread recipe, are there any?

Ds is nearly 2 and I'm starting to teach him to cook. I've got some lovely cutters to make 3d Christmas shapes from Ikea which I tested the other day and just nabbed the first gingerbread house recipe I found on a search.

The trouble is, it's so crumbly I can barely use it and forget about re-rolling. Ideally I'd like something with the consistency of playdoh that has the fortunate side effect of being edible once baked. Is there anything?

I use a BBC food one. Are you wrapping the dough tightly in cling film and chilling before rolling?

The recipe is Peggy Porchen but it's from the dreaded Daily Mail I'm afraid.

It's a great recipe for cut out biscuits. Delicious for a start but the mix is easy to handle.

I would take a photo of the page from my book but it's so chocolatey it's barely legible!

It isn't gingerbread, but if you are ever after a plain biscuit recipe, the Nigella kids biscuits (she does number shapes) makes loads and is virtually indestructible. Tastes fine whether they roll it thick or thin, withstands loads of rolling and shaping and is dead easy to do. Plus it makes enough for two batches, so bung one in the freezer for an easy baking day. Smile

Thank you! I took the leftovers to playgroup this morning for him to snack on and he demolished 3 (would have been 4 but I made him share with his little buddy!) so it's definitely something I'll be using a lot of and there's some awesome advice here Thanks

Plain biscuits is fine, I can always take a couple of tsp of flour out and replace with ginger :)

Try jam tarts too. DD loves rolling out the pastry and putting a teaspoon of jam in.

He won't be 2 for another 6 weeks so it's more the sensory thing at the moment and i'm lazy and like ready made and rolled pastry but that's definitely on the list for later

Plus I want to normalise cooking (and other housework) as a "thing that needs to be done" rather than a "thing mummy (or daddy tbf) does while I play" iyswim?
