Something different with sausages?

Money has been tight the last few months and sausages have featured heavily for us lately as a cheap meal and will do for the forseeable future.
Have just found six lurking at the back of the fridge...which is great, they will easily make a dinner tomorrow....but what to do with them?
If I see another plate of sausage, beans and mash I will cry :(
I usually do a kind of sauasge & tomato pasta bake kinda thing as an alternative but DH is not a huge fan of pasta and is sick of this too!
Any ideas? Only me, DH and DD (4) to feed and we all eat pretty much anything :) Thanks for suggestions!

I treat them like a proper meat sometimes, and do them with roast potatoes' veg and gravy

Mine love a sausage and puy/green lentil stew. Or skin the sausages and make patties/burgers.

I do a creamy sauce which we have with pasta but would be great with jacket potatoes or even rice

Roughly cut sausages into chunks and fry in olive oil with some fennel seeds. Add a handful of c hopped tomatoes if you feel like it. Grate in some lemon zest and chili (optional) then add smal fb lass white wine and small glass milk. Bubble for bit then add a large spoon of Creme fraiche. You can also add a handful of peas or spinach at the wine/milk stage if you like some greens. Serve over carb of choice.

Or make posh hot dogs. Slow roasted onion, maybe some tomatoe relish, mustard and rolls.

Sausage and lentil stew was going to be my next suggestion. We do sausage and bean stew but guessing you aren't interested in that!

Serve with rice or couscous.
Chips and beans or sweet corn
Serve with roast pots and Yorkshire puddings

I made up a sausage stew with rice last week to use up leftovers - chopped sausages, onion, carrot, red pepper, tinned corn, tinned tomatoes, baked beans and a squirt of barbecue sauce. It was really nice!

Cook the sausages and chop up.
Brown onion, celery, peppers in a pan, add sausages. Throw in some mixed herbs, tin of chopped toms and some chicken stock.
Let simmer for 30 mins while you do some wedges in the oven, mix in a tin of salad beans and there you go. Sausage casserole.

We mashed a can of canellini beans and had that instead of mash - you can do it with any bean / pulse.

I do crushed potatoe - not mashed, but just crushed. usually with squash and peas and herbs

Onion sauce - delish

Or yes, skin them and make patties with lots of herbs

I make what we call sausage hotpot in our house. It is not a hotpot really, I don't quite know why we call it that. I fry the sausages off with a little oil and some diced onion. Add a chopped carrot, parsnip and some new potatoes. I would go for about 2cm chunks. Cut the sausages in half or thirds you want some of the insides to come our and flavour the sauce. Add a tin of beans (cheap value version fine for this) and either a good dolop of tomato puree or a tin of chopped tomatoes. A pork stock cube, a generous sprig of rosmarry and a couple of bay leaves. Sometimes a dash of worcester sauce. Bung it in the oven at about 170-180 until the veg is soft take the lid off towards the end to let the sauce boil down and go sticky. You may need to add more water and turn the oven down if this happens before the veg is soft. If you like more carb, either add more potatoes, but we like a big chunk of bread for dunking, or dumplings (just suet, flour, water, pinch of salt) put in 20 mins before the end. It is very cheap and freezes well. I would also throw in any rogue mushrooms, sweede, bacon etc lurking in the fridge.

Toad in the hole is another favorite with sausages. My granny used to put in black pudding too.

I also do a spicy sausage pasta sauce with tomato and peppers (lots of paprika, and a sprinkle of chilli flakes, lots of garlic and onion). I usually do spaghetti, but it is still probably a bit too similar to your pasta bake.

Good luck, I am interested in other ideas too as sausages feature frequently on our menu thanks to budget!

Oh, thank you all so much for the suggestions, they all sound lovely and almost like we're not eating sausages....again! I'm usually quite creative with the bits and bobs that I have but my mind had drawn a blank, just really sick of the thought of the same food over and over!
Will go and have a rummage in the cupboards and see what I can make. More suggestions still welcome, I will never have enough sausage recipies! :)

I know it sounds a bit weird but I think it's tasty. Cook them and then chop them into rings and add to shop bought lentil soup. Have with lots of crusty bread.

Tonight I made toad in the hole and added quartered tomatoes & mushrooms and some left over cooked carrots and peas. It was delicious and went down a treat with my DH, 1 & 3 year old daughters and 4 year old niece. Cheap and easy , especially if you already have he sausages... The batter is just flour, milk and egg!

In slow cooker or casserole dish:

Shredded red cabbage (cook before if not using slow cooker) at bottom of pan, wrap sausages in bacon and place them on top of cabbage, slice apples and place on top of cabbage next to sausages.

Put in slow cooker for 8 hours or oven for 45 mins.

Sausage rolls. Then eat with potatoes and veg. Use hot water crust pastry to make sure they crisp up.

Sausage kebabs, a nice barbecue sauce. With onions and baps. And some chips. Home made of course.

Peel the skin off of them and make little meatballs out of them fry them off with an onion, some garlic and add a tin of chopped tomatoes...simmer for 20 mins...perfect to eat with spaghetti!

Glaze with tomato puree, Worcestershire sauce, honey / maple syrup then roast or grill. Serve with Nigel Slater's roast veg tangle and roasted new potatoes. For roast veg tangle peel a couple of carrots and a couple of parsnips into ribbons, add sliced red onion, pumpkin seeds and a few sprigs of rosemary. Toss in some olive oil and roast until a bit crispy Smile

I have a great chuck it in in the oven dish.

Halve some baby new potatoes and put in a roasting tin with a splash of olive oile, a couple of whole garlic cloves and some some chopped up butternut squash. Cook on high for 20 minutes or so, chop the sausages into small chunks, add the to the potato and squash mix and cook for a further 30 minutes until its all cooked through.

I serve that on a bed of wilted spinach with a fried egg on top - really tasty
