got chicken and pasta but what else to do with it?

my husband wont eat spaghetti bolognese like the rest of us will tonight, so i have taken some chicken breasts out of the freezer to do for him. But I am at a loss for what to do with them. Want to include pasta as that is what else I am cooking anyway. He doesn't like anything too herby/spicy and is pretty boring when it comes to food to be honest (meat and 2 veg man really!) Short of grilling the chicken breasts and serving it with plain boiled pasta I don't know what else to do!! He is finicky with pasta sauces as well. Men!!

Will he do pesto? Chicken and red pepper, with pesto on pasta - DH and DD like that.

Or if no pesto - just serve the pasta with some olive oil and grated cheese - less dry then. Cook the chicken with some roasted veg maybe?

make a white sauce and add cheese/frozen spinach/sweetcorn and add diced cooked chicken to it.

he wont eat sweetcorn and wont even try pesto because he thinks it looks disgusting. AARGH!

What about roasted veg? Cooked in some oil, in the ovem, with garlic, basil and the chicken - will keep the chicken moist. Then serve with plain or oiled/buttered pasta.

Peppers, tomatoes, courgette, aubergine, mushrooms, garlic, corn, ....whatever you have in like that really.

Chicken broccoli pasta bake?

Cook chicken, cook broccoli, cook pasta

Bung in an ovenproof dish & pour some cheese sauce over it. Sprinkle with extra cheese & bake until cheese golden & bubbly

hmm the chicken brocolli bake sounds nice. he eats cauliflower cheese so he cant complain about the sauce on that one now can he?! I can't get him to cook his own. Thats not fair when he has been out at work all day and I have been at home all day. Doesn't make me a very good wife does it?!

i can't believe you said that! my husband works hard all day. just because he doesnt like certain foods! I don't like certain foods either! He won't be home til late. Hardly fair to make him cook when he comes in from work starving now is it??

AnAngelwithin, I agree with you btw.

How about chopping up the chicken into cubes, roll in flour, seal on all sides in oil, add chopped onion, chopped carrot, chopped potatoes, a pinch of herbs like thyme, chicken stock, black pepper, salt (if required), bring the whole lot to boil and then leave to simmer for about 1.5 hours. That will make a filling and delicious meal that you can serve without the pasta.

Don't worry about what others think. You are doing what you feel works best in your house and in your sitation. If you are happy with the situation, then it's fine.

FWIW I do all the cooking in our house, even ont he days I work, and yes, I cook different meals for people at times - mainly as I don't eat meat, but DH and DD do.

However, if you are struggling for ideas, this is what I would do:

Give DH a sheet of paper and ask him to come up with 10-12 different meals that he would like to eat (sensible ones!).
Then do some menu planning, with things based round them - as well as things you and your DC like.

And insist that at at least one meal a week he tries something new.

It's a simple query about food, I'm really shocked and saddened to read some of theses bitchy posts.

BTW, chicken and broccoli bake is delicious.
