chips, make them, soak in lemon for coupel of hour then fry.
wedges, I parboil then roast with olive oil and whatever seasonings I fancy.

munz · 17/09/2006 13:14

(would rather not fry as we don't own a fryer anymore - I guess oven baked in olive oil?)

what's the best oil to use?

i have a potato wedges recipe on the blog that i do. it's under recipes, i think, or possibly finger foods. here
also the sweet potato chips are yummy. scroll down and you'll see them.

WideWebWitch · 17/09/2006 13:17

Buy organic potatoes, scrub them (but not peel), par boil for 5 minutes and then cut into wedges and put into a roasting dish with sunflower oil and sometimes garlic and rosemary and roast for 30-45 minutes. Let them dip into ketchup. Don't really do chips except from chip shop once in a blue moon and don't do b&s either.

crunchie · 17/09/2006 13:19

I do wedges quite a lot.

Take on potato per person, cut into about 8 wedges.
Put into small food bag, slosh in about 1tbsp olive oil and shake about to coat (If making for grown ups add seasoning like chili/paprika etc)

Put onto baking tray (I try to stand them up (no idea why!!)

Cook for about 25 - 30 mins at 200 (or whatever temp the oven is on!!)

crunchie · 17/09/2006 13:20

Oh yes don't peel and I don't par boil either?? Let keep it simple!!

aDAdOnMumsnet · 17/09/2006 13:21

I do what WWW does without the parboiling. 30 mins seems to do it. And like WWW use sunflower not olive oil. Works well with Maris Pipers. And requires very little oil really, so healthy-ish.

munz · 17/09/2006 13:24

ooh lovely thanks guys, just looking for a good cook book as well to go with it. - am thinking we must eat more healthily! lol.

aDAdOnMumsnet · 17/09/2006 13:27

oh and maybe flip them once during cooking for even colour...

munz · 17/09/2006 13:28

atich - out of intrest how old is/was your LO with the BLW? i'm also keen to do that (another thread thou) but not sure DS would get the same amount of food doing that as he would with purees spoon fed.

sweet pots are yummy. I slice them, parboil them thn bake in the oven with a good sprinkling of tabasco?
And what about those jewish potato pancake type things. Blend potato and oinion or whatever you fancy then make patties and shallow fry them. I learned about them from here, btu haven't made them in ages, someone will know what they are.

WideWebWitch · 17/09/2006 13:31

I only par boil if I'm in a rush, if I have lots of time then I just roast them straight away. Although I guess if you were rushed you could just cut the wedges smaller so they'd cook faster.

Kelly1978 · 17/09/2006 13:34

latkes!

Holidaymum · 17/09/2006 13:47

we never parboil for wedges just slice put into roasting tin and add a tblspoon olive oil toss and bake, add paprika, cayenne, thyme or whatever seasoning you prefer for spicy wedges.

Also nice id always bake tons more jackets than you need, cut in half, scrape out potato for mash and keep the skins use the next day and fill with cheese/ham or dot with butter, bake and you have crispy skins

munz · 17/09/2006 13:50

thanks kelly that one looks good.

HM - do u put any mash back into the skins?

kittylette · 17/09/2006 17:20

try sweet potato and pasnip chips,

oil a tin with oliveoil and chope the parsnips and potatoes into chip shapes, roll the about in the oil, season with salt pepper if you wish and roast at gas mark 5 for 35-40 mins

yummy

TooTicky · 17/09/2006 17:30

I boil them (halved or quartered) then shallow fry in olive or sunflower oil. We call them "big chips" to encourage ds2.

YellowFeathers · 17/09/2006 17:34

I have a couple.
New potatoes, par boiled and then put in some foil and drizzle on some olive oil, crushed salt and pepper and some fresh rosemary. Cook in oven or its a good one for the BBQ.

An easy one which I'm sure lots of people do. Jacket potatoes, scoop out the middle when cooked and mix with bacon, onions, phillidelphia and put back in the jacket. You can use lots of other ingreadiants and even put some grated cheese on top and grill to melt.
Its an easy meal that one too.

aitch71 · 17/09/2006 21:06

i use smoked paprika on the sweet pots and a splash of soy sauce in the oil for the ordinary potatoes. and organic deffo taste better i think.
top tip would be to do them on a metal grill rack rather than a baking tray so air circulates better and you don't have to faff with turning over. they cook faster too so no par boiling. i think this officially makes me the laziest person who has posted about potatoes so far.
DD was 6 months, munz, easy-peasy, she loves it. as it happens i am continually amazed by how much she packs away, so i'm not sure if that's true about not eating as much with BLW, but i do know that sometimes she eats absolutely nothing but i'm not bothered as she can have more later if she feels like it.

hulababy · 17/09/2006 21:09

I do homemade wedgies/chips most weeks. Do them in varying sizes, depending on which potatoes we have in. I always leave the skins on though - just give the potatoes a scrub/wash first.

Cut into pieces
Spray with oil (if doing low fat)
(or have oil in baking tray in oven heating up, and add potatoes to that)
Sprinkle on some rosemary and/or garlic
Cook for in a hot oven for about 40 minutes

hulababy · 17/09/2006 21:09

wedges NOT wedgies

aDAdOnMumsnet · 17/09/2006 22:13

lol homemade wedgie!!

Holidaymum · 18/09/2006 09:17

No munz, I don't put potato back in the skins, kids love those the most now class them as a real treat. Usually do it if I want mash for something plus the mash is tastier out of jackets than just boiling.

munz · 18/09/2006 13:27

hmm will remember that one HM thanks - sounds v good, infact will be a goodie to try when my inlaws come down as the MIL absolutly loves jacket spud in the oven (we don't own a microwave) so I wonder if she'd go for the mash and skins the following day? hmm. hmm got my mouth watering now - with a bit of salad. hmm.

so what do u guys recon for seasoning then? in my tesco.com i've got paprika, bbq, cajun and mexican.
(basil, bay leaves, parsely, taragon, chilli and fennel seed in the cupboard)

(notice any trends yet! lol.
