Interesting additions to fajitas?

Need a quick and easy dinner tonight so have decided on fajitas, but wondered if anyone had any suggestions on what to add to make them more interesting? Usually we just do chicken, peppers and onions with sour cream and grated cheese on the side.

I like salad in mine for a bit of crunch. Also serve mine with guacamole and re-fried beans and some spicy salsa.

We chuck anything in, particularly as its a good way to get veggies in for the children. Carrot sticks, Courgette sticks etc
No sour cream? Use Philadelphia.
No chicken? Just use more veg
Too spicy? Add some tinned tomatoes and/or a spot of cream.

Not sure ours are ever the same twice in a row.

I always wash the tomato sauce off baked beans and throw them in. Watercress and rocket. Yum. Might have fajitas tonight :)

Coriander.

Either chopped and added to the onions, or in with the sour cream.

Steak and mushroom fajitas are good. I sometimes add sweetcorn to chicken. I always add chopped coriander and the juice of a lime at the end and serve with homemade guacamole (the Guardian website has a best ever recipe which truly is!).

Oh yes to steak and mushroom. Mushroom goes well in a fajita.

Pig, why do you buy baked beans and wash the sauce off? Why not just buy a tin of haricot beans?

Avocado. We always have avocado if we've got one ripe. Mash up and add a bit of cayenne and salt for cheat's guacamole.

Some fresh salsa (i.e. chopped tomato, bit of raw garlic and/or onion) is nice if you can be bothered.

Chopped crunchy salad leaves are good.

We sometimes go veggie with them, they are lovely with carrot batons, courgette strips, baby corn, peppers, Auvergne and tofu chunks... Plus a really nice home made guacamole with lots of fresh chilli and lime Smile

Rhonda, usually I just throw whatever's in the cupboard in, I never plan for these things! And baked beans are only 29 cent, I've never checked to see how much they are plain but I bet dearer.

Big bag of doritos and layers of grated cheese. Pop in the oven for a few mins and eat with mexican dips.

Homemade guacamole: Avocado, onion, tomato, chilli, squirt of lime juice. I just blend it up with a hand blender.

Thanks for all the suggestions. Havr gone for some of the more conservative ones - guacamole (though shop bought as needy, teething baby means all cheats welcome) and might throw in some.chickpeas. What about red lentils? Would I need to boil them first?

Red lentils would definitely not make them more interesting, I doubt chickpeas would either. Maybe mushrooms, squash or courgette, guacamole, tomato salsa, cheese, soured cream,...maybe some chipotle sauce if you want some spicy smoke. Enjoy!

Red lentils wouldn't really work tbh. Too mushy. I suggested chick peas and stand by that though, assuming you like them to start with.

If you can find any, chipotle paste gives a yummy smoky flavour.

Chickpeas are good in fajitas! Not sure about red lentils though.

I like a bit of butternut squash or sweet potato in my fajitas.

Chipotle paste is great for fajitas. We always make a quick guacamole with avocado, coriander, lime juice, baby tomatoes, red onion, garlic and smoked paprika. Just whizz it up in the blender. Also smokey hot sauce, a dollop of Mayo and creme fraiche all mixed together makes a nice alternative to sour cream.

DP has just started making fish fajitas instead of chicken and they are so good. White fish cooked in coriander, lime and garlic. We have it with guacamole, the creme fraiche sauce and watercress.

I'll skip the red lentils then - I've never actually had them before and bought them on a whim to try with DS.

I do love chickpeas so think I'll stick with them. Unfortunately I'm one of those awkward people that HATES coriander, so that's definitely out.

Might try squash and sweet potato another time, I do love them.

PS we can't really do spicy in this house, is Chipotle spicy?

Chipotle is spicy so add a small amount until you get the level of spice you like.

We also do pineapple or mango salsa with out mexican fajitas. You can buy packs of ready chopped fruit if you want to save time (but more expensive). Whizz in blender with tablespoon of veg oil, red peppers, lime juice, coriander and half a fresh chilli. Just add more or less of each ingredient until you get the flavour you like. Serve as side with nacho chips.

Rice as a side to fajitas is also nice. Make your own chicken flavour rice by boiling with a stock cube and add some peas at the end. Batchelors golden savoury rice is good cheats alternative.
