Cheese on toast

My dcs love cheese on toast. They would eat it every day.

They are fussy beggars.

Whilst I am delighted to be able to add another dish to my tiny repertoire of accepted meals, I would like cheese on toast to be well, a little more nourishing and balanced. What can I do to it to make it so?

You could use wholemeal bread if you don't already do so. Sprinkle the cheese over veg before grilling, chopped peppers, mushrooms etc. Go for a pizza style cheese on toast, but a layer of tomato sauce on first, although you could make a puree with cooked tomato, red pepper celery etc, whizzed up as a base.

Thinly sliced apple under the cheese is nice. You could alternatively add peaches or pineapple?
Whizz up some tomatoes, carrots and coriander and use as a sauce under the cheese?
Wafer thin ham under the cheese?
I LOVE cheese on toast!

Croque monsieur - ham on the toast, with cheese (sauce) on top - obviously just cheese is fine!

Croque madame - the same, but with a fried egg on top

For extra protein, mix an egg with the grated cheese before spreading on the toast and grilling. Sort of Welsh Rarebit. Serve with some baked beans for extra fibre.

Will they eat raw veg? My DS likes cheese on toast or toasties, I sometimes serve with carrot sticks and apple slices. Or just as is, because for the odd meal it doesn't hurt.

Slight variation on the theme, but if you have a toastie maker, you can make cheese & Baked Beans toasties - just spoon a little bit of baked beans into the middle of the bread, add some grated cheese - delicious although can be dangerously hot when first cut open.

The absolute key with cheese on toast is not to be too stingy with the cheese. Thick slices and cover all of the bread.

OP I think with some lovely multigrain chunky bread, together with some tomato paste, and finely chopped peppers, tomatoes and onions, it's quite a healthy little snack.

MichonnesSamuraiSword I agree about being not stingy with cheese, but it has to be well toasted. No point in loading it up if it hasn't felt the burn to transform it into that yielding gooiness. Nothing worse than finding patches untouched by the heat.

Do try the banana/peanut butter combination, sheer devilment.
On the cheese and devilment note, my guilty pleasure ( and now my teenage Dds) is a plate of bubbling melted cheese done in the microwave served with breadsticks and sticks of cucumber for dipping and twisting into the molten mass.

Agreed on making sure all your cheese on toast is properly melted - you have to watch it like a hawk until it reaches the perfect all over bubbling state..

For those who eat fish, apparently Worcestershire sauce sprinkled liberally on the cheese before putting under the grill makes it very nice. (sorry, this isn't helping OPs question on how to make it healther!)

I can also recommend grated cheese & chopped spring onion & red pepper in a fajita wrap, then microwave for 10-20 seconds = instant (and relatively healthy) heaven!

Spread some pesto on the toast, add a layer of sliced tomato and then the cheese.

I often add capers and sliced olives but that might be a bit too strong flavour-wise if you say they are fussy beggars!

We used to toast bread lightly under grill
Add some drained of most of their juice baked beans
Add slices of cheddar and grill
Then top with a selection of the following:-
Bacon, grilled mushrooms, grilled tomatoes, poached egg.
Sometimes we put everything on.

We always had for weekend lunch with fresh orange juice or Nesquick chocolate milkshake to drink.

Finely sliced leeks are my favourite addition, not as strong as onions, but give it a little oniony flavour.

My grandad used to make 'cheese and onion'
We do it in the microwave:-
Melt butter slightly
Add chopped onion
Nuke for 20 sec or so till beginning to soften
Add cheese cubes
Nike in short intervals- stirring in between
When cheese has melted and onion cooked serve with triangles of white bread to dip in.
Eat it quickly or it goes tacky and hardens.

Cheesy scrambled eggs might be worth a try too.

Another thought- Sainsburys did a good demo once where they made quasedillas by spreading Primula squeezey cheese between 2 wraps and warming in a pan.
They really were surptisingly tasty and very quick to make.
Serve with guacamole and salsa
Or beetroot, pepper, cucumber, tomato etc

I love cheese on toast with a scrape of marmite under the cheese (lots of vitamins) and chopped onion and tomato on top of cheese before it's toasted.

I had this in Germany once and 'tis divine:

  1. toast lightly
  2. add ham
  3. then pear slices on top
  4. then cheese
  5. grill
