I have just bought a toastie maker (used to love them when I was a kid!) but am sorely lacking in inspiration.....

Ham and egg with a bit of mustard (or ketchup as a dip). Squidge the bread and ham into the holes a bit then crack an egg on top. Quickly put the second slice on top then close the toaster and let the egg cook through.

cheese, onion and tomato is a classic for a reason.

Depending on how well your toastie maker seals the sandwiches, if you grate your cheese and add a little beaten egg to it, it makes it all fluffy and delicious. However you don't need much, so I only tend to do it if I'm making more than one sandwich otherwise you end up throwing away the left over egg.

You can do this for any combo that you use cheese in (so the cheese, onion and tomato with a little egg added for example is delicious) - and you could probably do it for other combinations too.

Oh my god these sound amazing! Love the idea of cooking an egg in a sandwich like that.

Ps stupid question but if you were doing cheese and onion would you fry the onion first?

Strong cheddar & ham (with ketchup dip).

My DH & DD1 favour blue cheese with mango chutney.

Nutella with apricot jam - like a Sachertorte - but remember filling will be of thermo nuclear hot on first removal from the toaster.

Lots of sliced peppers, some red Leicester cheese, and tabasco on wholemeal bread is so delicious.

Peanut butter and giant chocolate buttons - that go slightly gooey but maintain their 'snap' - on soft white bread is fantastic.

bought a lovely jar of "easy red onions" or something - it's like a red onion marmalade. Anyway - it's gorgeous as a toastie or panini wth /feta or goat's cheese

Love the sound of these, a toastie for breakfast wouldn't be wrong, right?Wink if it's the kind that tightly seals your sandwich don't rule out leftover Bolognese or chilli. With cheese or sour cream. Sounds a bit odd but tbh it's the only reason I cook Bolognese anymore.

Re onions in toasties - spring onions I wouldn't pre cook, just finely chop. Likewise if I had some shallots or a small red onion I would often chop it really finely and use without cooking.

If I was cooking onions for something then I might do some extra for a toastie the next day. But if I'm making a toastie I don't want to be faffing around cooking stuff to go in it! I also quite like the fine raw onion in the toastie. Big thick loads of raw onion that would stay very raw is a very different proposition!

Agre that onion marmalade is a fab alternative if you want cooked onion flavour; both are nice options just depends what you feel like at the time!
