It's the dreaded mince night..

Every time it's mince night we end up having lasagne/ bolognaise/ shepherds pie/ chilli.... And it's boring! We only use a handful worth of mince for a meal for 4, so tend to bulk out with veg/ beans, but geez is 4 meals on rotation dull!
So.. What else can I make with the dreaded mince?!

JO has a nice recipe in his 30 minute meals book for a beef hash. DH and I love it, the kids not so much.

Well done on having 4 mince based dishes. We only have Bolognese or cottage pie. The DC won't eat chilli or lasagne.

Tonight is cottage pie night. Oh, the joys Hmm. How do you make a cottage pie with only a handful of mince though?

Cottage pie
Bake potatoes, then scoop inside out &make into mash, put in bolognese type mince into skins then put mash on top, grate cheese over if want then bake again till golden topped.

Zombie I use very little meat too the way I do it is dry fry mince add finly chopped onions add finly chopped ceraly a in a cup crush a oxo cube fill cup halveway add to pan slimmar when cooking the potatoes I steam carrots cut lengthways

Once meat etc done place in cooking dish layer the carrots then drain tinned peas and add them top with mash potatoes and bake twenty mins in oven

if you use lamb mince (and even if you dont) you can make a flat bread pizza style thingy called Lamachun (sp) which is middle eastern. It needs spices etc www.traditionalturkishcooking.com/2013/05/lahmacun-lahmacun-also-known-as-turkish.html

Tacos! Love them. Sides of lettuce, cheese, salsa and a nice ragu cooked slowly.

www.jamieoliver.com/recipes/beef-recipes/beef-kofta-curry-with-fluffy-rice-beans-peas is a big hit in this house.

I do a modified version without the lentils and my own curry sauce and just plain rice but you could bulk out the mince with loads of veg and pulses or breadcrumbs or something. Really easy, quick and tasty.

We love mince here! It's a handy vehicle for getting (grated/finely chopped) veg into my DC and for getting them to try new flavours.

We do the usual bolognaise (with pasta or baked potato), chilli etc. I do cottage/shepherds pie with different toppings (sliced potato or sweet potato). The DC love burgers and koftas. We've always got a supply of homemade burgers in the freezer (pork/apple, spiced lamb, ginger pork, chicken/sweetcorn etc). We also do lamb mince curry with peas in it. They really love that one.

zombie I dry fry the mince then strain off the fat (high fat content meat is cheaper :( )

Then add diced onion, courgette, celery, peppers / depending on the meal baked beans/ kidney beans etc!

Anything else exciting on your menus for mince?

Oh, and can I just add my anger at my quiche I decided on tonight because I forgot to get mince out doh! all the egg leaked through the pastry and all over my oven :(

poshme I just love the sound of your idea of baked potatoes scooped out with mince inside and baked again with cheese on top...in fact I love the sound of out so much I'm going to try it this week.Smile

Oooh, add red lentils to bulk it out too - you really don't notice them, even skeptical DH who accidentally added half a packet to a chilli he was making agrees!

Fry onions and sliced carrots till soft, add mince and stir till browned. Season with salt, black pepper and whatever dried herbs you have to hand/like. Stir in a crumbled Oxo cube and then cover with water. Put the lid on the pan and cook for at least 30 minutes. Take the lid off, add a sloosh of soy sauce and Worcestershire sauce, stir and then cook till the liquid is reduced down.

Serve with Yorkshire puddings and peas.

Old fashioned, but a real favourite in this household!

Make a really liquid bolognaise sauce and stir in risotto rice. Simmer gently and stir constantly, adding more water/stock if you need to.

You could possibly use the little pasta you get for making minestrone/normal rice but not sure if it would work properly.
