Your favourite salad

As D and I are trying to be good (as both look heavily pregnant!!) we this week and the week after doing mainly salads for the forseeable future. Getting v bored with them already and currently not enjoying a chicken breast, cottage cheese, salad lunch, bleuuugghh.

I've had some fab salads at home in the evening but need more variety so...

What's your favourite salad?

all involve large amounts of cheese and oil so probably do not fulfil your requirements

greek salad good and easy - and can be done in vast quantities and kept in the fridge for 2-3 days.

otherwise -buffalo mozz, tom and basil - but not low cal enough for your needs methinks...

slice pink grapefruit, shallots and fennel into bowl. make dressing with juice from grapefruit & a little olive oil. it keeps its crunch in the fridge pretty well too if you make loads.

I like to have a few different salads, so would have this as well as green salad plus say baked potato or some couscous with roasted veg.

We like fattoush. Or any salad with a dressing of grilled seeds etc. Not totally low cal, but tasty and filling.

(I wouldn't really stick to just salad, you could eat a range of lower calorie foods?)

tabbouleh is nice though - bulghur wheat, finely chopped garlic, spring onions, tomatos, cucumber, green olives, mint and parsley , dressed with lemon juice.

oh yum yes, cous cous with grilled veg (asparagooos, peppers, courgette?) and lot of herbs (flat leaf parsley, mint) with a minty yoghurty dressing

watercress with orange segments with a few toasted sunflower seeds

noodles with spring onions sliced carrot a few cashews a few prawns sliced yellow pepper and a tiny bit of sweet chilli sauce stirred in

nicoise- little gem cherry toms boiled egg french beans tinned tuna a few boiled new potatoes

grated carrot julienned into ribbons with poppy seeds, toasted sesame seeds and dressed in lemon juice

roasted red and yellow peppers and cherry tomatos with balsamic vinegar.

Ohhh I can do some cheese, jesus I don't want to make myself suicidal.

Not convinced abut grapefruit as don't like it on it's own but will try it, just for you.

caeser salad, lots of parmasan but no anchovies. like them but too salty in a salad.

it'll help you put weight on though, not loose it

Trout and vegetable garden salad

375g smoked trout
1/4 cup lemon juice
1medium green pepper, sliced
4 small courgettes, slice
1 medium green cucumber, sliced
250g cherry tomatoes
6 small radishes, halved

Dressing
2 TBPS lemon juise
2 TSPS olive oil
1 clove of garlic cruched
1 TBSP low fat creme fraiche
1 TBSP chopped fresh basil

Remove skin and bones from trout and flake into large pieces. Combine trout with lemon juice and vegetables into a dish. Mix ingredients of dressing together and add to trout just before serving.

This dish serves 4 (160 calories per serving).

Tomatoes+mozarella+basil+olive oil+salt.
Round lettuce+feta cheese in a balsamic vinegar dressing.

I eat this all the time!

Get a few new potatoes, cut up small and pre cook in the microwave.

Bung potatoes into frying pan and after about 5 mins bung in chicken (1 breast chopped), add some chopped up bacon and at the very end add some chopped up spring onions and some cherry tomatoes.

Serve warm on a bed of rocket with slices of avocado. Sprinkle a little balsamic vinegar on top (optional).

Absolutely gorgeous.

Ooh, thanks MV, I'd forgotton about chick pea salad, we ate it all the time last summer. mine had halloumi and sun blush toms, served up in tortilla wraps. yum.

My fave is handful of random salad leaves, apple, stilton and walnut. Not very diet friendly for Thomcat though - sorry!

Rare roast beef and asparagus salad

250g beef fillet
250g fresh asparagus
2 small courgettes
250g cherry tomatoes
bag of mixed salad leaves

Dressing
1/4 cup low fat plain yoghurt
1 1/2 TBSPS tomato sauce
1/2 TSP Worcestershire sauce

Tie up the beef with string to hold in shape burring cooking, place in a baking dish, bake in hot oven for 10 mins reduce temp to medium and cook for a further 20 mins. Cool beef and cut into strips. Steam asparagus until tender cut in half and combine with beef, tomatoes, courgettes and lettuce in a bowl. Mix ingredients of dressing and pour over just before serving.

This does 4 people (127 calories per serving)

My fave is not very unfattening either

Some crispyish lettuce usually Romaine/Cos
Rocket
Chopped spring onions
Cubed avocado
Tomatoes
Cucumber (cubed)
Cubed apple

Stick all that in the bowl with olive oil & balsamic vinegar in the bottom

Then fry some pancetta cubes or lardons, bung them on and finely grate some cheese (parmesan, strong gouda, farmhouse cheddar, anything you like really) over the hot bacon

Leave to melt a bit then toss it all

(I do a low cal version with small amounts of bacon, oil and parmesan and leaving out the avocado if that helps)

I love Greek salad, I cannot eat olives on their own but when they are in greek salad they are so yummy and I love feta cheese too.

I had a salad from Marks & Spencer the other day and it was gorgeous it had them little salty fish in them but I have forgot what they are called.
