but i am interested to know what bubble and squeak is

MamaG · 09/06/2006 10:12

I often freeze mash, its fine.

Bubble & squeak is a leftovers dish in our house using cold leftover mash and cabbage - mix together (season if you like it) and form tennis ball sized balls with your hands then pat down slightly to make a flatter (2 cm ish) shape.

Fry in a little olive oil. It's yummy!

NotQuiteCockney · 09/06/2006 10:13

Frozen mash goes weird, at least if it's finely mashed.

You could make something like fishcakes, but with veg or chicken or something in it?

hulababy · 09/06/2006 10:14

np - no idea. I don't eat meat anyway! LOL.

I freeze mash on the top of cottage/shepher'd pie. You can buy frozen mash - so it must be possible to freeze it.

NotQuiteCockney · 09/06/2006 10:15

I'm not expert in potatoes, so if other people say mash freezes fine, then ignore me. (Mine wasn't mashed, so much as pureed, with a stick blender. Might make a difference?)

nailpolish · 09/06/2006 10:17

its not finely mashed and it doesnt have milk or anything in it

mamag - just tattie and cabbage? is that all? might give it a go, thank you

might make that with cabbage and other veg, and freeze the rest (like fishcakes but with veg instead of fish?)

thanks ladies!

Roast chicken and mash is lovely.

You could make a veggie base instead of the mince - finely chopped veg cooked in a tomato sauce with herbs and then make up the same as the shepherds pie.

Or you could do cheese and potato pie, it's yummy - mix grated cheese with the mash, pile in a dish, put more grated cheese on top and bake till golden.

The other day I stuffed halved peppers with mash, put cheese on top and cooked them on the BBQ. They could be baked in the oven.

SecurMummy · 09/06/2006 10:35

Mash doesn't freeze well on it's own but copes much betteron something so a sheapards pie freezes dine but plain won't. I suspect it is to do with the water content? (not sure why really, just was one of our "discoveries" when running a pub kitchen!)

nailpolish · 09/06/2006 10:40

lots of fab ideas, anorak Smile

i think i will try b & s and maybe stuffed peppers

dd1 goes crazy for peppers

secur, you have put me off freezing, and i have a faint memory of that from baby weaning days too

Think I may try bubble and squeek too, I always thought it sounded interesting, but never knew the recipe! Blush

nailpolish · 09/06/2006 10:47

I want a recipie for real beef wellington (I think that is its name!) - I know what it is and think it is probably grim, but have always wanted to try it - just to say that I had IYSWIM lol.

Toad is basically sausages with yourshire pudding all around them! Very nice - with mash Grin

nailpolish · 09/06/2006 10:51

mmmmm i love yorkie puds, thanks

If you whizz mash with a blender I think it breaks the starch up in a strange way, iykwim.

Goes like glue.

I freeze mash fine but make sure it is 'mashed' and airtight ie put in a bag and suck air out.

Other extra mash ideas are fishcakes (tin of salmon, and some seasoning, mix together with a litle egg, shape into cakes and fridge for 1 hour. Dip in egg and breadcrumbs and fry til outside is golden and pop in oven to fiish the middle)
Fry onions/peppers etc and then put in mash, fry sides, then make two holes in the mix in the fryingpan and crack an egg into each hole. Cook til eggs are done and eat.

I love anything with mash in!

Mash will be OK until Sunday, thats only a couple of days in the frige. Just heat it up really well. YYou could make a cheesy mash pie to go with teh chicken on Sunday. Basically it is mash, mixed with grated cheese, and butter. Put in a gratin dish, top with more cheese and cook while roasting chicken :)
