What meals do you do with which meats?

Sandwiches or stirfry or curry with leftover lamb, beef or chicken, and then soup or risotto from stock afterwards.

We only have roast chicken, and pretty much always make a chicken pie out of the leftovers.

Occasionally do a curry or stir fry instead.

The rest is used in sandwiches for packed lunches.

We have it cold with salad and baked potatoes or chips on the Monday and Tuesday depends on what meat it is.

This week it is gammon so will be chopped up in macaroni cheese. Beef will be a cobbler; lamb a shepherd's pie; pork is stroganoff and chicken will be a stir fry.

Lamb: Make pasties. Chop spuds and swede (and carrots if you like) into small chunks and boil until almost done. Drain and add small chunks of lamb and the remains of the gravy. You can also add onion, peas, whatever! Put into one side of puff pastry circles and seal edges and bake for 20-25 mins.

They are my kids new favourites and do not require a lot of lamb!

Chicken: Chicken noodle soup. I use lazy garlic & ginger in a vegetable boullion (marigold) with noodles, spring onions, chicken and sweetcorn. Add a dash of soy sauce and some chilli if you like and you are good to go!

Gammon: Gammon and potato pie. Chunks of gammon, chunks of cooked spuds, onion, herbs (thyme, bay leaf) cook with 1 cup stock and 2 heaped TBS creme fresche (sp), a TBS of flour, a tsp whole grain mustard. once thickened, make into pie using either puff or shortcrust pastry.

Day one Roast
Day 2/3 Cold chicken for sandwiches/snacking
Make stock with carcass -freeze some
Ugly bits given to dog/cats
Day 3 Chicken fricasse recipe
Day 4 use stock to make soup or risotto
Freezer-stock for soup or sauce or risotto

  • laksa

  • curry

Beef

  • Thai or Vietnamese beef salad
  • any sort of stir fry

Lamb

  • never find this is as good for leftovers, but I do a nice curry of spinach, coconut milk and other veg like squash or cauli

Pork

  • lovely in sandwiches with apple sauce
  • great cut into cubes and fried as ingredient in fried rice.

Chicken - pie, stir fry with rice (with any odds and ends of veg in, and egg to bulk it out if not enough chicken left).

Lamb/beef - whizz in blender, mix with pasta sauce, then make lasagne. Or meatballs.

lamb and beef: make gyros: warm thin sLiced meat in a wrap. add red onion, (cooked or raw) feta cheese, tzatziki and a garlic/tomato mixture (make this fsrt - just chop toms and a couple of garlic cloves and leave for flavours to mix).

Fajitas - fry strips of beef with cumin and cayenne pepper, plus clots of onion and bell peppers sliced. Add to wraps with lettuce, sour cream, cheese, guacamole and salsa.

Do you all make your own pastry?
If I make pastry I use Delia's quick flaky recipe. It's not truly authentic but it's very easy and tastes good.
I sometimes use it for samosas instead of filo which is such a pain to handle.

Chicken : curry, casserole, stew, pie, soups. If there is just a bit of stew or curry or whatever left over will make into a pasta sauce.

Lamb: cold with chips or curry

Beef : cold with chips and gravy

Pork : goes to the dog. I don't really like pork but enjoy a small roast from time to time.

For beef pies I would use cheaper cuts and cook slowly with onions, carrots, and wine or guiness.

I never make my own pastry. Lve puff pastry but is a faff to make so buy ready made.

For pastry I do half fat to flour, chuck in some egg and/or water still it sticks together, then roll and bung in oven. Unless I am actually following a recipe.

Any time I attempt to save leftover meat, it never makes it to the following night, as my DH scoffs it well before then. Any tips? (Other than a fridge lock...).

Hatty - left over roast pork, chopped into small chunks with mixed beans, (Heinz 5 beans are good if your DC aren't used to bean casseroles) onions, tomatoes and mushrooms, bit of red wine and thyme in the slow cooker is good.

Pork stir fried with garlic, soy, honey and ginger, mixed in with whatever stir fry veg your kids will eat, (mangetout, baby corn, carrot) and served with egg noodles.

or in a sweet n sour sauce: pineapple, red pepper, tomatoes, mild spices and a splash of lemon or white wine vinegar for the sourness. Serve with rice

I make my chicken pie rather like a fish pie, with a mash topping. It's nicer with swede and mash topping rather than potato alone. Or sweet potato and potato mash.

Sometimes I make it with pastry, but I prefer it with a mash topping.

Right I've gone for pork (shopping being delivered Tuesday) so...

Roast pork
Pork stir fry (with ginger, garlic, honey & soy)
Pork in rolls with salad etc

Tesco have got half price pork loin joints at the moment, will that be ok? I've only done gammon or chicken before Blush always thinking there's no point just for us but as I can now spread it over three meals....
