Ways to learn to love cauliflower?

Hate it. Hate it, hate hate hate it.

BUT...

My New Years resolution is to learn to love the food I hate. I've finally, begrudgingly gotten round to cauliflower. Last one was spinach, I can eat it without even hesitating now, very proud of myself. The thing that made it click for me was a spinach and feta filo pie, SO good.

But I'm stuck on cauliflower. I've found I've overcome the texture of it, I don't mind it so much now. But the flavour... God. I've tried steaming, boiling, baking, putting it into a stew, you name it. Still hate it.

I'm sitting in front of a bowl of cauliflower cheese and ugh.

Has anyone got some amazing vegetarian recipes for it? I'm thinking something spicy might help.

Curried cauliflower is delicious.

My favourite ways to eat cauliflower are curried (with mushrooms, spinach and chick peas), raw florets dipped in garlicky vinaigrette, and rubbed in spices and olive oil and roast until crispy (google "popcorn cauliflower for recipes for that one).

I only like it covered in cheese sauce. Any other form - plain, curried, stewed - bleuch.

I have to say, while I admire your desire for a challenge, I think there does come a point where you have to say "actually, I think cauliflower/whatever tastes like shit". It's not an admission of any sort of failure. You're allowed not to like things.

With potatoes or pasta, covered with cheese sauce. Serve with ketchup. Grin

Celery's on my list, usualsuspect. Though I can eat it in things like stew and pasta sauces, never raw. I think that one's going to be tough.

Popcorn cauliflower looks like a winner! I'll try it when I recover from this round.

but cauliflower and potato curry or cauliflower cheese soup.

Take the cauliflower and put a pan of boiling water on the stove to boil.

Chop the cauliflower in to cubes, about an inch square.

Open a bottle of red wine, when the water begins to boil, gently put the cauliflower in the compost tub, turn the pan off and drink the wine.

Cauliflower 'rice' is lovely. Whizz up a head of cauliflower in a food processor or finely chop and then fry in butter with some onions and peas. Great with stir fries

Never let it see water. Roast florets in olive oil, with a squeeze of lemon juice and an optional teaspoon of sugar. About 30 minutes.

I hated cauliflower, as did DH. We have declared that this mid due to our mothers' boiling techniques. We can polish off a while head of cauli now before the rest of the meal is ready.

And google Riverford's cauliflower cheese recipe. Divine.

grated raw, cooked with a bit of olive oil, garlic & chilli (& a splash of water) - makes a yum pasta sauce with lots of parmesan/pecorino grated over & mixed in

I second the suggestion to roast it. Salt, pepper, cumin seeds and some chilli flakes plus olive oil and whack it in a hot oven.

Jamie Oliver's broccoli and cauliflower cannelloni is really good, had forgotten about it so must make it again. The best no meat meal I know

Simmer cauliflower florets in milk until tender. Drain, reserving a bit of the milk. Add some butter, a bit of grated nutmeg and seasoning and purée. Add a bit of the milk if too dry. Lovely as part of a Sunday roast dinner!

Use it in soup in place of potato, great way to reduce calorie content.
