Cauliflower pizza, it's genius, try it now!

I had to start a thread about this, had to.
Followed a link, found a recipe, intrigued by it etc, etc, and when I do that, they are usually OK, good, nice, great but this time, wow.
I am not the author of the blog, I don't know her, never met her, spoke to her.
Am a regular poster blah, blah, but you have to try this.
It's amazing, truly amazing.
The base goes all crispy, and cheesy and delicious, and is just not cauliflower, the topping is what you make it ( I put capers on it for me, naice ham for DD, and smoked cheese).
You have to make this!

oh wow. dd1 (who is gluten and dairy free) will go nuts for that - cauliflower is her favourite vegetable!

will have to try that this weekend. a bit of passata, some ham or chicken, and bob's your uncle.

I'm gluten free and have yet to make a successful GF pizza base. It also looks like a stealth way of getting more veg into the dc <evil cackle>

No, it doesn't.
It's not cauliflowery at all.
It's fat bastard food, but made with veg, and tastes just like you'd want pizza to taste like, but better.

That was a pain, admittedly. Blitzed cauliflower gets everywhere.

Don't know where I went wrong but the crust wouldnt hold up at all, plus it stuck to the baking sheet despite spraying quite a lot of frylight on. Maybe I spread the "dough" too thin?

The bits I pulled off did taste really nice though, and I really couldnt taste the cauliflower at all. I could smell it though, after going out and coming back in

Hmm, not sure.
The base on mine certainly weren't solid, best eaten with a fork but they did lift off the tray fine.

The mixture was quite wet, I blotted it with kitchen towel before baking.

Would love to try it again as it did taste really nice, and I'd love to have a pizza!!

maybe it would be better as a garlic bread sort of substitute - or maybe I just got it totally wrong grin

\maybe try draining it on kitchen roll, or shoogling it around in a dry hot pan?
Oh, I dunno, it'll probably make it worse!

This looks promising, I'm trying to cut out bread for at least a week (carb addict) so this may be a good substitute.

I would suggest turning the oven up higher and make sure it cooks long enough to crisp the bottom. Everyone's oven is different. I didn't have a problem with forming the crust but the 2nd time I made it came out better because I did leave it in the oven longer. I also found that making a Margherita pizza (no sauce) helped to keep the pieces together. I followed the recipe to the t.

I have tried this successfully and I like the moist base better than stodgy flour bases.

I steam cauliflower in a microwave (no need to add water to cauliflower) and use a potato ricer to break down the cooked cauliflower.

Optional step, press riced cauliflower in muslin to remove excess water (gives a firmer base which you can pick up easily)

Add beaten egg (1 egg per half cauliflower)

Add seasoning, salt and pepper, garlic etc I don't use cheese or anything else in the base.

Press mixture of cauliflower and beaten eggs into a baking tray, bake until firm on top, flip over and bake until firm on other side.

Add tomato sauce, herbs and toppings.

Grill until cheese melted

I blitzed the raw cauli in the mini chopper in batches (total pain in the arse bit btw), then steamed it in a bamboo steamer.

I think I need a ricer.

I just wanted an excuse to buy something else for my kitchen, hence the steamer.
I already had a ricer.

Wow, must try this over the weekend - DD2 has a birthday sleepover coming up and one of the guests needs gluten-free (eggs/dairy ok). Have sorted the cake (making standard sponge cake with Doves Farm flour substitute - tried it last week and it's almost indistinguishable from usual wheat flour cake, just don't eat the raw mix off the spoon as it tastes weird/gritty!)

Made this at the weekend. Total triumph.

I didn't cook the cauliflower just blitzed it to tiny breadcrumb consistency in the blender. Worked like a charm, the base was a solid pizza base consistency, knife and fork not required.

I felt like an alchemist.

Ooh, must try it like that Squoosh. Mine were a little softer than I'd like, so perhaps raw is the way to go.

bumping as I have just made this. It looks great. Ds and I will be tucking into one in a moment but I wondered if anyone had any success with freezing some for later?

I also could do with some tips on getting the cauliflower blitzed as my blender was rubbish and took forever

This would be awfully soggy with (cooked) frozen cauli wouldn't it? I used the fresh stuff for a roast yesterday <wails> I want pizza!

apparently you can do it with the frozen stuff. I guess you could cook it, let it cool and either drain and chop or whizz it up and drain off any excess water.

give it a go and report back grin

its blooming fantastic. Ds kept asking for more. Dd complained about the smell (she hates veg) so I didn't risk wasting any on her blush

Did this tonight, after keeping this thread on my "watch" list for ages. Lovely base and 3 yo dgs ate it all up with relish, but my tip would be "don't add pineapple, it all goes a bit soggy!" grin

Very easy, though, and will do it again.
