Following on from hulababy providing me with an amazing pasta recipe the other day, I have bought loads of fresh pasta and want to do loads more.

So if you have any quick/easy/cheap-ish pasta recipes please post them for me Smile

Was that the pesto, chicken and red pepper? Very simple and not really a recipe as such. Just 4yo DD's favourite! :)

We are having pasta tonight. Dh and Dd are having a bolognaise type thing. I am having creamy tomato and roasted vegetable.

dh does spicy chicken:

Fry up red onion & chicken with garlic and dried chilli
Add cream & pesto
Stir in pasta
Add parmesan
Eat!

Or you can put in courgette or pepper or whatever veg you have lying about.

no i made the roasted veg one and dh has declared it the best thing I have ever made him and took it to work the following day too to 'show off' to the blokes in work.
It was gorgeous, I did leave you a big thank you on the thread, it will now be a weekly thing I think, or if dh has his way, every night Smile

black olives, red onion, garlic and puy lentils. saute. toss w/cooked pasta and homemade vingaigrette. grate parmesan cheese over it. mmmmmmm.

if you have leftover stuff (bolognaise sauce, cold pasta) mix it with a few eggs 7 some cheese and make pasta omlette things in frying pan...with extra cheese on top.mmmmmmmmmmm

dead easy one is pesto, sunblush toms, artichoke hearts, chorizo and black olives. needs salad with a fresh lemony dressing as its quite rich.

Ah, yes we all like that here too :) Pleased it went well. LOl at your DH; glad her liked it!

One of the veggie dishes we all eat. The one I have done today I have added some creme fraiche, and used passatta instead of fresh tomatoes, as didn't have all the tomatoes I needed in. Have tasted it when cooking and it was yummy.

We've just had meatballs and pasta here at the nursery and the children loved it. Halal lamb meatballs for some but the others I made with:

500g organic pork mince
12 rashers smoked back bacon (rind removed)
3 tablespoons semolina
1 egg
2 tablespoons dried oregano
3 tablespoons grated parmesan cheese
black pepper

Bung it all into a food processor and blitz.

Roll into walnut-sized balls and drop carefully into a tomato sauce (which you have, of course, made earlier Wink) Partially cover and simmer gently. Don't stir until the meatballs have firmed up and started to cook or they will fall apart. Simmer gently for 20 - 25 minutes.

Serve meatballs and sauce with pasta and extra parmesan.

I think I will pinch that one as what annoys me with meatballs is frying them off first.

Too true, OO! This cuts out all of that faffing around with oil and it's really tasty. You must use smoked bacon though as it really adds something to the overall flavour.

dh loves this one, i picked it up from a friend years ago

pack lean mince
1 onion
1 clove garlic
mushrooms (as many as you like)
mixed herbs
2 tin campbells tomato soup
creme fraiche (optional)
pasta

fry your your onion and garlic till soft, then add the mince fry till browned then add your mushrooms (in the meantime cook the pasta) once the pasta and the meat is cooked mix all together, then add the tins of soup give a good mix and then sprinkle in the mixed herbs, cook for about 15mins or till soup is warmed thro, pour on creme fraiche serve with garlic bread and a nice chilled glass of wine Grin

pasta cooked & drained - put back in pan with some grated carrot, olive oil, tuna from a tin, any sauce or pesto, some tinned green beans & mix up - put some grated cheese in & your done - yum

ok have decided what I want to use:

pine nuts
garlic
sunblush tomatoes
pesto
feta cheese

will these ingredients go and do I need to add anything else to make it a bit saucy?

ok HELP!!!!

Ive bought my ingredients, but what do I do with it.

Do I need to heat up the sunblush toms, and pine nuts? The nuts look distinctly not cooked!

Do I add the pesto to the pasta? How much? Do I need to add some tinned tomoatoes so its not dry or will it be ok?

God I am crap!

mosschops, most italians have pasta which is coated with a sauce rather than (the probably british habit of) swimming in it. you could toast (in dry frying pan) the pine nuts but you don't have to. just add everything to the cooked drained pasta. personally i would stop at the pesto and add a glug of olive oil, plus parmesan to serve and lose the feta

Pine nuts would benefit from lightly toasting in a dry pan. Think the sunblush tomatoes would warm through when mixed with the pasta, although not sure. You just add the pesto to the pasta, normally I would use the whole jar.

i'd add a couple of dessert spoons of pesto & see what colour/intensity of flavour you get. with shop-bought pesto it can vary a lot.

thanks bundle, I know I prefer it not swimming in sauce! So just toast them in frying pan then? Add pesto/tomatoes and feta cold to pasta yes?
Why would you lose the feta, will it be minging

it won't be minging, just personal preference. would use feta if i was making pasta with say cooked chopped spinach, a little chilli, garlic and a few olives. horses for courses. yes just chuck it all in at the end.
don't forget the red wine Wink to drink of course..
