I've never tried stovies, even though my Mum was Scottish and I've lived here for 11 years.
Give me your best recipes, so I can have a go at making it later this weekGrin

Do it!! Mine taste pretty darn close to my grans...however dp bought a huge bag of baking potatosHmm and I never checked so they are a little odd looking. Bit taste so good!

I love stovies, but I don't really have a recipe. Just depends in what leftover meat I have in the fridge.

I'm Scottish and I love stovies. Here's the recipe I use now - I use plenty butter and I do mine with square (lorne) sausage.. Mmm...

I know Dh uses dripping, onions, potatoes and either mince or corned beef and soem sort of stock. Simmered all down until yummy!

Boil potatoes and add chopped onion till they are overcooked and nearly all the water has boiled away, cube corned beef and stir till corned beef is heated up. Hey presto! I've never done square sausage so I'm going to have to try that one.

I do it like this; brown onions, mince and sausages (or whatever you want to put in it) and add a stock cube and a LOT of water, then you basically cook the totties in the money gravy water till they start to fall apart. Then eat with liberal quantities of broon sauce.

I have a tin of corned beef in the cupboard, that I bought months ago to make corned beef hash and never got round to it, so I think I'll use that, dripping, onions and potatoes and then cobble all your idea together and see what happens!
Will buy broon sauce too!

I use mince for mine, and like the with the potatoes still quite firm, with lots of gravy, just like my gran used to make.

Basically fry off the onions and mince, add cubes potatoes, lots of stock, salt, pepper, my secret ingredient and let it bubble away till it's the preferred consistency.

Bloody gorgeous.

It can be made with any left over meat though and originally was potato and onions with whatever meat was left over. It's nice with left over sliced lamb too, and sausages, and corned beef....yummy

No sausage or mince you heathensWink. It's 3 onions fried down in beef dripping(just the white fat off the top, add the juices later) until well brown. Add about half pint of water to the onions and your peeled potatoes, about 2.5 kilos (I cut the to the size I would for boiling), add one large pot of hough and the juices out of the dripping, lid on and leave for about 90 mins stirring occasionally. At the very end add a bit of bistro best to flavour and season as you will. Serves lots.

The cook gets to scrape the delicious burnt bits off the bottom of the pan.

Read this thread earlier and it inspired me to make stovies!

Its bubbling away and is nearly done-smells amazing.

I did it like this today;

Brown a large chopped onion in beef dripping, add to that 1lb of Lamb mince-brown.

Bit of salt and pepper.

When the mince is nicely browned add about 1pint of boiling water with a veg stock cube and a teaspoon of marmite.

Add peeled chopped potatos and 1 large carrot peeled and chopped.

Give it a stir, bring to the boil then turn down the heat to low and cover.

Cook on a low heat covered for about 45 mins (or until the potatos/carrots are soft and its the consistancy you prefer)

We used to eat this when we visited family in scotland and even though its a 'make do' dinner I always think of it as a treat.

Cunning, my auntie made them like that and Is the base recipe. Delicious on it's own, nice with other stuff added.

It seems to be quite regional as well.

It was always made with carrots in my family! I know different regions/families will have their own take on the recipe though. I suppose one day there were carrots left over from the roast the day before so they got chucked in.

Ive made it without carrots but I think it tastes better with.

While we're in a Scottish mood....who likes/makes Tablet ?

I've never known what it was, but looking on google images, it looks a bit like a thickened version of what we call corned beef hash. But we usually add carrots and swede.

Definitely no carrots or turnip!!
Only veg is onion and carrot.
And def not corned beef - that's just corned beef hash..
