Any special tips for making mashed potato without lumps?
Many thanks x

A potato ricer. You don't even need to peel the potatoes (though that does make it harder to squeeze and you need to remove the peel before doing the next batch).

It's possibly my single favourite kitchen tool!

Kaloobear · 20/08/2012 15:51

A lot of butter and a lot of cream Blush

NettOlympicSuperstar · 20/08/2012 15:52

Yep, ricer.
Non lumpy mash every time.

StuckInTheFensAwayFromHome · 20/08/2012 15:53

Similar size potatoes when boiling, and check more than 1 when seeing if fully cooked in case your pans aren't cooking evenly. A fork should go in easily.
Drain, then back onto low heat for a minute or so, so the excess water in the potatoes steams off. Then mash with butter, only once you have mashed out all the lumps do I add cream or milk .
And if you can be bothered, then a potato ricer is ideal for getting rid of all lumps, but I seem to get a good consistency with a normal masher and its much quicker and less messy to use.
Apparently type of potato helps - I think you want the floury ones (that are also good for roasting) rather than waxy ones

Potato ricer, wouldn't be without it.
I would however recommend peeling them first, it does make it a hell of a lot easier.

Potato ricer definitely. Another vote here.

Jackjack · 20/08/2012 15:57

Thanx guys will look out for a ricer!

Ricer here too! I covet an industrial one with a handle!!

NettOlympicSuperstar · 20/08/2012 15:58

I got mine cheaply on Amazon.

GlaikitFizzog · 20/08/2012 15:59

Like this one www.amazon.co.uk/Horwood-Homewares-TC50-Judge-Strainer/dp/B00022BQDQ/ref=tag_stp_s2_edpp_url

I've just ordered it! Oops :o

GetOrfMoiUsain · 20/08/2012 15:59

I have never used a ricer, however I have a pathological loathing of lumpy mash and have never knowingly served it.

I think the key is to make sure your potatoes are really cooked. I then mash it with butter with a normal masher, whilst heating some milk in a pan. When the milk has boiled I then add it to the mashed spud and then beat it to death with a wooden spoon. Makes it very fluffy and light.

Talyra · 20/08/2012 16:20

Ricers are good, but you don't need one. I do similar to GetOrf but with a fork and it goes lovely.

NettOlympicSuperstar · 20/08/2012 17:39

Ignore Talyra, you do need a ricer, and every other gadget you can possibly fit in to your kitchenGrin

Talyra · 20/08/2012 18:29

Admittedly I do own a ricer :p but it was given to me by someone who prefers lumpy mash which I think completely odd!

vodkaanddietirnbru · 20/08/2012 18:35

we have this one but it is very messy and gives me extra to wash so I prefer to use a masher

NettOlympicSuperstar · 20/08/2012 18:51

Eww, who prefers lumpy mash?Confused
I never tire of buying kitchen stuff, shame my bank account can't keep upGrin

lunar1 · 20/08/2012 18:52

Mine goes in the kitchen aid mixer!

The right sort of potato is crucial.
Hot milk, make sure potatoes as dry.
Having said that I am bloody useless at mash.
I can bake a genoise, whip up a béarnaise and taste an atom of nutmeg in anything.
But mash? Fuck no. Just can't.

coffeeinbed · 20/08/2012 20:03

And I have one ricer and a mouli.

NettOlympicSuperstar · 20/08/2012 20:21

I need a KitchenAid too.
I have a Kenwood, but it's broken, and I can't afford to get it fixed currently.
I love it, I do, it was my Mum's, but it's not very pretty.
I want a pretty thing.
I need to win Lotto first though, obv, and for that, I need to actually buy a ticketGrin

NettOlympicSuperstar · 20/08/2012 20:22

Genoise fills me with horror.
I'm not a good bakerSad

coffeeinbed · 20/08/2012 20:26

You just beat the living daylights out of the eggs and fold the flour and butter as gently as possible.
That's that.

TeaDr1nker · 20/08/2012 20:31

Use a hand held electric whisk/mixer also full fat milk and/or butter. Maris Piper potatoes are good for mash.

I mash mine down with a hand held masher to break the potatoes down then whisk with electric mixer and butter/milk

Good luck
