Cake recipe wanted please for using up dessert apples

Hi all

I've got some dessert apples (five I think) that need using up i.e. they are a bit old and soft and not great for eating on their own.

Inspired by GBBO last night I'd like a good cake recipe for me to use them up. An upside-down cake recipe would be even better!

I'm not a complete beginner but I'm by no means an expert and I don't have a whizzy stand mixer so a recipe that needs five minutes proper beating with my hand mixer might hurt a bit too much Grin

I always use MN recipes for these things (the banana bread recipe is my fave) as I know they are tried and tested by 'normal' people so please help me out!

I'd make a crumble rather than a cake. Don't pre-cook them; slice with a dash of water in the bottom of the dish (really, hardly any) and a bit of sugar and cinnamon, then 225g plain flour breadcrumbed with 175g butter and mix in 175g caster sugar.

Or... just bung them in some muffins. 400g plain flour, 1tbsp baking powder, 1tsp cinnamon, 1/2tsp salt, 185g caster sugar - mix - then add blended 2 eggs, 85g melted butter and a 284ml pot of buttermilk (or sour cream, or creme fraiche) - fold gently until mostly incorporated - then put in chopped apples (~250g) and fold a bit more until just mixed. That is an adapted recipe so might be crap... will make 12 big muffins.

tbh just make any old sponge recipe and add your apples finely grated - they will add moisture and richness of flavour, there is no partuclar need for a special recipe.

I love The Hummingbird Bakery recipe for Apple Streusel cake. It's the perfect combination of cake and crumble. I can't do links on my phone but just found recipe on some sort of baking blog (girlwiththewoodenspoon).

Quarter then eight them and then saute in a bit of butter and add a slug of maple syrup at the end if you have, if not a bit of sugar. Serve with pancakes for breakfast tomorrow - my DC favourite! Quick and very easy.

Fan, I've found the streusel recipe here. It looks great - I have everything in the cupboards and it doesn't look too taxing. Thanks :)

Elephants, thanks for that top tip. I shall definitely remember that in future.

And I love crumbles but my DH is Crumble King in our household so I wanted to d something different.

Dorset apple cake, very easy, and a lovely tangy bit of lemon to it too. Lots of recipes online.

Glad you didn't do crumble as I completely had a brain melt when I gave you those dimensions. My memory is really awful since children; I should have checked. It's 175g flour, 75g butter and caster sugar. That makes for a fairly thick topping.

Google apple squad cake and add pecans and brown sugar on top. It is amazing, you can have it hot with custard for pudding and it is still fab cold with a mug of tea the next day.

Peel the apples and slice them quite finely. Grease a loaf tin with butter and then add the apple in layers. After each layer sprinkle with lemon juice, maple syrup and cinnamon. When the loaf tin is nearly full, make a plain sponge mix (or make it before hand and add it at this point- ykwim). Pour the sponge mix on top of the apples, encouraging it to filter down. Put enough in to cover the apple with a cm or so layer. Cook until the sponge is golden.

(sorry- am on my phone so don't have access to quantities, temperatures etc. this is a gorgeous pudding that does need desert apples to do)

Well it's in the oven... I made a few silly mistakes (baby brain) but the main thing I'm worried about is the fact that my round cake tin is only 18-19cms not 20 so there were two layers of apple slices on the top (and I had one whole sliced apple left over) and I didn't use all the streusel topping either. Who knows how it'll go!?! Confused

I'm sure it'll be fine. I find with my oven it took longer to cook too so I would recommend checking it with a skewer before you take it out.

Yes the recipe says 35-45 but I have a fan oven and it was perfect after about 45-50. As its risen there are gaps in the topping so maybe another load of apple on top would have been fine. It's just cooled so I'm going to get it out of the tin to cool. Not cutting it until tomorrow as I'll be taken it to church to go with tea & coffee after the service...!
