Cake recipe wanted please for using up dessert apples

Hi all

I've got some dessert apples (five I think) that need using up i.e. they are a bit old and soft and not great for eating on their own.

Inspired by GBBO last night I'd like a good cake recipe for me to use them up. An upside-down cake recipe would be even better!

I'm not a complete beginner but I'm by no means an expert and I don't have a whizzy stand mixer so a recipe that needs five minutes proper beating with my hand mixer might hurt a bit too much Grin

I always use MN recipes for these things (the banana bread recipe is my fave) as I know they are tried and tested by 'normal' people so please help me out!

Well as a final update it was delicious!

I sliced it thinly as I tried a piece (baker's prerogative) and it was quite dense and thin slices was perfect.

I forgot to take a photo for you so I'll describe it: it was a few inches deep, sponge cake in the first third the slices of apple with what I can only describe as the batter binding it together (cooked but sort of uncooked IYKWIM) and then the lovely crumble topping.

I think it would go excellently as a pudding with custard but it got rave reviews from everyone who tried it.

I will definitely make it again, but I'll buy myself a 20cm tin before then and will see if that makes a difference!

P.s. I member I used mixed spice instead of just cinnamon which worked beautifully and I probably used 3/4 teaspoon instead of 1/2 just because it didn't look enough and everyone commented on the lovely spice flavour.

Thats one to make next then, i love the combination of apples and spices, and the crunchy toppings, oooo, stop it now, or i'll go out and buy some apples and i've only just turned the oven off after cooking all morning.

I've just found this set of pictures from another blog that tried the apple crumble streusel cake recipe and this shown brilliantly what mine looked like.

I'm glad mine did actually turn out as it was meant to - and I had exactly the same cake batter almost-disaster too at 35 mins :)

Wing, that looks amazing, how long did you cook yours for then, cos it said 35mins not enough and 45mins too long?

In the end nanny it was between 45-50 mins and I reckon it could have done another couple of mins. I checked it with a Lakeland colour-changing cake tester thing at 35 mins and it was runny like batter as the above blogger says hers was too. But bear in mind I was using a slightly smaller tin.

So the original timings (35-45 from memory) are probably right. I had a fan oven so that must have helped the deeper cake to cook quicker IYKWIM?
