low fat indian recipes to impress please!

Hi, got family on a three day visit next week. Sil is on a diet and doing well (like I should be) we all like Indian food so am doing that Thurs night. Anyone got any easy, healthy recipes? Would quite like to have a go at my own naan bread. Thanks.

I think most Indian food that doesn't have a buttery sauce is quite low fat anyway, isn't it? I only really do the recipes in Jamie's Ministry of Food but I must say they are darn tasty for all that. A vegetable jalfrezi is lovely and v healthy too.

You can make a nice side salad/relish thing by finely chopping red onion, diced cucumber, quartered cherry tomatoes, a squeeze of lemon juice and some finely chopped fresh mint (or even a bit of mint sauce from a jar).

This has coconut in so isn't terribly low fat but it is delicious: put some dessicated coconut in a bowl and add natural yoghurt until you get a fairly stiff but spoonable texture. Add chopped green chilli and chopped coriander plus s&p.

You can roast cauliflower with cumin seeds to have as a healthy side dish - it's lovely.

Thorans are dry curries, so not too fattening, tikka always an option too.

We've marinated chicken pieces in tandoori or tikka paste & zero fat yoghurt then threaded on skewers with onion, peppers & mushrooms.

I used a great butternut squash and chick pea curry recipe that was on the bbc website and is about 200 cals per portion.

Is basically butternut, chickpeas, curry paste (I used balti), tomatoes, red onion, stock and low fat yoghurt. I also chucked a load of spinach in there. Really yummy, healthy and filling!

Gordon Ramsey has a good recipe for tandoori-style mushrooms - it's really easy and I think it would be fairly low fat.

Not in anyway traditional ingredients or method but fooled an indian friend.

Diced chicken breast
Passatta
spices - choose your favorite
a bit of creamed cocoanut

Just bung it all in a pan (you can add tinned tomatoes and /or pulses)

tandoori chicken (can also be done with 'meaty' fish)

skinless chicken breasts
1 lemon or lime
low fat plain youghurt
salt
spices

put a few slices into the breasts - not right through just so you have a slash in the chicken.

rub salt and lemon/lime juice into the chicken
put the youghurt and spices in a bowl and mix

marinade the chicken over night and grill / oven bake.

You can also do this with chicken pieces and put them on a skewer.

Naan bread - don't bother unless you have a tandoor - just buy them from a shop or takeaway.

Chapatis are easy - but I did them once, then decided the kitchen took too much cleaning afterwards.

2 red peppers and 2 onions dry fried
once soft liquidise.
and to a pan with a tin of chopped tomatoes some grated ginger ( about a thumbs worth ( and you can get it really easy in supermarkets and buy just as much as you need).
2 cloves of garlic crushed
1 tablespoon curry powder
1 chilli ( of less if needed or chilli powder if you have it)
1 teaspoon dried cummin
1 green pepper sliced,
1small onion sliced

hey presto slimming world point (and weight watchers)free points syns etc curry sauce.

freezes well so can be made in advance then just add meet or veg of your choice.

brilliant sauce recipe will make a couple of batches of that today and freeze, also love the tandoori recipe sashh and will def make that!

I'm actually making this for our dinner today. Never made it before, so can't tell you if it's ok!! It's a weighwatchers recipe and is 274 cals per serving.

Chicken Tikka Masala

2 tablespoons tikka masala curry paste
1x150g tub of 0% fat Greek style yog
450g boneless chicken breasts cut into chunks
low fat cooking spray
1 red onion thinly sliced
1 teaspoon freshly grated ginger (or ready prepared 'fresh' ginger')
400g tin of chopped toms
150ml chicken stock
2 tablespoons fresh chopped coriander
100g basmati rice
salt & pepper

Put curry paste into a non-metallic bowl and mix in the yog (reserving 60g for later). Add the chicken, stir well cover and leave in the fridge for at least an hour, overnight if poss.

Heat a large non stick pan and spray with the cooking spray. Add most of the onions, reserving a few for a garnish. Saute for 1-2 mins then add the ginger and marinated chicken. Cook for 2-3 mins.

Add the toms, stock and coriander to the saucepan. Bring to boil, reduce heat and simmer, uncovered over a low heat for 20-25 mins. Season to taste.

When the chicken has been cooking for 10 mins, put rice on to cook.

Serve the chicken & rice garnished with the reserved yog, onion and a sprinkle of coriander.

i am indian one of the nices marinades for chicken is:
fry one onion in oil thinly sliced( when onions golden brown mix onion and oil over chicken)
3tbsps of yoghurt
salt
paprika
a bit of ginger and garlic
These are all rough measurements mix it all up and leave to marinate as long as you can.Cook chicken in oven or fry

Also for veg fry half an onion in oil thinly sliced when golden put in bag of spinach and par boiled potatoes.If you can buy a box of veg spices in asian supermarket( called shan or any other similar brand) if you don't have access add salt chilli powder and tiny bit of turmeric.Add some tomatoes.

Gordon Ramsay's fish Tenga is my fave. Sooo easy. Make a paste of Chilli, Garlic and Ginger adding in a large bunch of fresh corriander. Fry fish for couple of mins in mustard oil. Take fish out and set aside. Fry paste with big tbsp tumeric. Throw in very large glass of water then 6 chopped fresh toms and a large diced spud. When veg has broken down sauce is ready warm fish up in sauce and serve with more corriander. I've also made this with chicken.

Oh try cooking burmease stule - you basically put onions, spices, garlic and ginger in a blender and use that as a paste.

My Grandparents are Indian and used to cook wonderful curries.

Fry half and onion until soft, add curry paste (or curry powder mix of powder and water) and fry remainder of onion with bit of garlic and ginger (powdered is fine). Add a tin of tomatoes, half a tin of water, chopped veg (anything you have!) and cook on hon until vegetables are done.

The Hairy Dieters book is the one to go with their current series. It's all different kinds of food, made lower fat. Lasagne (made with sheets of leek instead of pasta), there's a Spanish chicken recipe I'll be trying next week as well as the curries, stew, pies...all sorts!!!

Chana masala is my favourite homemade curry. Main ingredients are chickpeas and tomatoes with spices, so very low fat. Utterly delicious, DH absolutely hoovers it up and he is a meat-eater to the core. I serve with rice and naan, plus plain (low fat) yoghurt if people like their curries very mild.

I can't link on my phone, but I use a recipe by The Wednesday Chef (blog) called Chana Punjabi for some reason I don't understand. It's really good.
