I'm actually making this for our dinner today. Never made it before, so can't tell you if it's ok!! It's a weighwatchers recipe and is 274 cals per serving.
Chicken Tikka Masala
2 tablespoons tikka masala curry paste
1x150g tub of 0% fat Greek style yog
450g boneless chicken breasts cut into chunks
low fat cooking spray
1 red onion thinly sliced
1 teaspoon freshly grated ginger (or ready prepared 'fresh' ginger')
400g tin of chopped toms
150ml chicken stock
2 tablespoons fresh chopped coriander
100g basmati rice
salt & pepper
Put curry paste into a non-metallic bowl and mix in the yog (reserving 60g for later). Add the chicken, stir well cover and leave in the fridge for at least an hour, overnight if poss.
Heat a large non stick pan and spray with the cooking spray. Add most of the onions, reserving a few for a garnish. Saute for 1-2 mins then add the ginger and marinated chicken. Cook for 2-3 mins.
Add the toms, stock and coriander to the saucepan. Bring to boil, reduce heat and simmer, uncovered over a low heat for 20-25 mins. Season to taste.
When the chicken has been cooking for 10 mins, put rice on to cook.
Serve the chicken & rice garnished with the reserved yog, onion and a sprinkle of coriander.
