Can anyone share their vegetarian/pescetarian meal plan?

I'm out of ideas, bored to death of cooking the same things all the time.

DS (11mo) eats anything you put in front of him Grin, but DD (3y2m) is quite picky; she's got much better these past six months but she'll still only touch certain vegetables, for example.

Does anyone have a weekly meal plan they could share?

Easy pasta sauce that's not tomato based - whizz up some cottage cheese with something - spinach and a bit of lemon juice, or perhaps (a favourite) basil and a bit of garlic and have low fat pesto with protein already incorporated....

DS is 3 and a bit and fussier by the day. He wants pasta every day. I'm only making it max. twice a week, to try and give him a balanced diet. and because as we eat together, I don't want it any more than this! he won't eat chilli or curry or anything spicy at all, so it's all a bit mundane.

This weeks meals:
-pasta bolognaise (with quorn mince)

-Mushroom Stroganoff & brown rice with quinoa stirred through the rice (DS refused this! once I'd made it, despite loving mushroom risotto)

-Kidney Bean and sweetcorn stew (tomato base) with pilau rice

-pasta pesto peas green beans (aka green pasta)

-baked beans with potato and fish fingers

-steamed fish roast carrots leeks cabbage potato wedges

-homemade veg pizza

The difficulty is something OTHER than pasta!

theidsalright, yes! DD is the same, she'd eat pasta every single day.

Tried the quinoa and it was a success! (I said it was rice, though Blush) She loves rice and I was a wimp, I know I know...

Hmm DD is a rice and pasta lover so home recipes include

Mushroom risotto / pea risotto / peas and prawn risotto (yes, the fussy child loves prawns Hmm)

Tuna pasta

Spaghetti with cream and prawns

Fish with bechamel sauce/ potatoes / cheese

And repeat Blush Hence my desperation...

Yesterday it was spinach lasagne. It wasn't a raging success but she tried it and ate a little.

I had gnocchi with butternut squash and sage tonight. It's really easy, chop one squash fairly small and fry in a big frying pan until soft, add some chopped sage and stir through cooked gnocchi. Serve with lots of grated parmesan though it's also nice with goat's cheese.

I love gnocchi, they cook so quickly and make a (small) change from pasta...

I made a beany chili for DS at the weekend that went down suprisingly well.

Gnocchi! Yes, that's something DD likes as well. I made butternut squash soup and to my surprise, she liked it (with grated cheese on, though).

gauchita I wouldn't worry about it . It sounds like she's eating a decent diet to me, does she like salads and dips?

Great thread, I'm always wondering what on earth to make for tea!

This week we've had:

Matter paneer curry
Veggie mince chilli burritos
Veg lasagne (sometimes make with veg mince, sometimes chop loads of veg instead like mushrooms, courgettes etc)
Veg mince shepherds pie (hmmm, we seem.to have loads of veggie mince!)
Tuna pasta bake
Fish, potatoes and mushy peas
Lemon sole, potatoes and veg
Quiche and salad
Sunday dinner with everything but meat.
Pizza
Fajitas either just with veg or with fake chicken pieces
Baked potatoes
Sometimes just make huge salads with things like mango and apple in them.

That's all I can think.of just now!

Another really easy pasta sauce is melted Boursin. It's really good with fried mushrooms.

Ppeatfruit, nope actually I don't own any recipe books Blush She's definitely eating better than before, but it still sounds like a LOT of carbs and not veg at all. She doesn't like salads, nor dips, no... We got home late today, fortunately it was tuna pasta day Grin

Would it help if she helped you go shopping and prep. salads and dips? Then put them on the table and YOU all eat them; I bet she'd try if there's no big deal made out of it.

My DP has a habit of buying loads of veg and stuffing the fridge - great and all, but if it's all going to be used I/we really have to be organised and freeze more meals. I'm trying to plan meals better so that there's less waste, and also so that there's DD-appropriate food. (She's 7mo so sort of in a funny place with solids at the moment.) DP is completely vegetarian, and me and DD have chicken or fish once or twice a week.

For those with toddlers, do you know about sweet potato wedges?! They are honestly a revelation! Far quicker to prep than regular potatoes - no need to par boil. Peel, slice, brush with olive oil (and whatever herbs or spices you like) and into the oven for half an hour. Sweet potato's a really good food and I think quite child-friendly. Would be fine with a quick salad.

Red lentils are also great for quick stews or soups. I tend to make mine tomato-based since it brings out their flavour. Onion, garlic, peppers, courgette- throw whatever in, simmer for about twenty minutes or half an hour, and serve with a bit of creme fraiche. Full of iron.

Yes Ishallpractice I like that name Grin. Along with sweet pot. wedges you can use parsnips and celeriac (i don't eat pots.) so i love these used as mash as well.

thereistheball they are delicious its a hfw veg recipe, for Swede and potato pasties but I omit the potato and up the Swede and carrot.
So for the filling 200g carrot, 200g Swede (both cubed) a grated onion, handful of thyme (springs only)and parsley ,stock cube (about half a cube or a tsp bouillon) mix all together with 30g melted butter.

You can also add 50g strong cheddar if you like.

If not using packaged pastry, a rough puffrecipe is used, 300g plain flour, pinch of salt and 150g cubed cold unsalted butter. Toss salt and flour with the butter, add enough old water to bring together to a dough (150ml guide) shape into a rectangle, and roll, fold into another rectangle and roll, repeat for or five times wrap in cling film and chill for min 30 minutes. Roll out and use a small plate to cut large cirles, I get five or six, but the book says four. Fill the circles, crimp the edge, brush with beaten egg and bake for 40mins at 190c.

It's a very good recipe for picnics and lunch box if you can manage to save a few, but they are amazing warm so you might not get leftovers.

ppeatfruit, she usually cooks with me (doesn't shop, though, as I always shop online) but she gladly serves things for others to eat Grin and she leaves them. However, tonight was spinach lasagne and she ate it! and at lunch I made an omelette for DS and sandwiches for her as I was sure she wasn't going to eat it, and she asked for some and ate it all! My jaw dropped, I promise.

pregnantpause, those sound delicious. They shall be added to the plan, the same as IShall's sweet potato wedges.

Yes it's normal, just a stage most DCs go through they grow out of it Grin best not to say anything either way IME.

I used to get v worried when she was younger, as she hardly ate anything except cheese and yogurts... but I listened to the wisdom of MN Grin and "relaxed" so these days I only ask her if she wants to try and that's all.

When she ate the omelette yesterday I was jumping with happiness inside but I only told her "oh, you want some more? Ok, here you go" Grin
