What was/is your vegetarian dinner?

Every time I start this thread I always get inspiration. We're not a vegetarian family but we do love it Smile

Tonight I did dss favourite. Homemade bean and veg enchiladas, kebab style red cabbage which is softened in salt then rinsed then lemon and oil added,plus salad of onion, cucumber,tomato with fresh coriander, mint sauce, lemon juice, and a bit of fenugreek powder.

So what was/is your vegetarian dinner?

Our last vegetarian meal was mediterranean vegetable lasagne with salad. We're not vegetarian but probably what you could call "part-time vegetarian" in that we eat a veggie meal about twice, sometimes three times, a week.

Do you have a recipe for the enchiladas, they sound interesting :)

My last vegetarian meal was sunday lunch. It was a Chinese meal with bear paw's tofu, fish fragrant aubergine and a cucumber in chilli oil salad. Despite all the animal names, it doesn't have any bear or fish in them. The bear paw refers to the texture of tofu after you've fried them in oil. And fish reference is because it uses traditional seasoning you'd cook fish in.

We aren't vegetarians either, and eat about 50/50 veggie and non-veggie meals.

A big pot of veg and butterbean stew, with dumplings. Very easy and straightforward.

Followed by strudel and custard.

We're vegans.

We had this tonight herbivoracious.com/2009/09/quick-chana-mushroom-masala-chickpea-curry-recipe.html with some pilau rice and pompadoms :) It was delicious.

Tonight I've had cauli cheese, green beans, bread & butter. Tomorrow we're having dahl & chappati's with tomato, red onion & coriander salad & raita.
Mixed bean chilli is another regular meal for us. Butternut squash thai green curry is a favourite.

Tonight we had stir fry with tofu and noodles.

Tomorrow we are having felafel and salad and minty yoghurty sauce in pitta breads, with corn on the cob and more salad.

On Weds we are having veggie sausages, mash and vege including my favourite, savoy cabbage.

On Thurs we're having either asparagus tart or asparagus quiche, with Jersey Royals and salad.

Will probably do a chickpea curry, a lentil chilli and a lentil lasagne over the weekend and into next week, or a veggie Shepherd's pie.

That red cabbage sounds bloomin' lovely.

Our last vegetarian (vegan) meal with yesterday - actually, we had vegetarian for lunch and dinner.

Lunch was red lentil, carrot, chick pea, and coconut stew with homemade naan bread. It is just gently spiced (black mustard seeds, ground cumin, ground coriander, ground turmeric, ground cloves, and a dash of ground cinnamon), and everyone loves it (kids specifically request for me to make it).

Dinner was spaghetti with fresh tomato sauce. Very quick and easy. To make the sauce, take a very generous amount of very good extra virgin olive oil (quality important). Over low heat, infuse the oil with the flavour of 3 garlic cloves sliced thinly. When the garlic is toasted, remove it with a slotted spoon. Dump a punnet (2 for a hungry family of four) of baby plum tomatoes sliced in half and season with salt and pepper. During this time, the spaghetti will have cooked. When the tomatoes look gently fried and the spaghetti is al dente, drain and dump in the sauce. Toss, and add a sprinkle of chopped fresh basil and fresh parsley. Serve.

SophiaWinters I just make it up as I go along. Today I used finely chopped onion gently fried then added 2 tins beans (borlotti and pinto) I usually use chickpeas. you can also use soaked cooked beans. Tin of toms, good dollop of tom puree, some ground cumin, paprika, salt and pepper chopped coriander, chilli if you want? Just go with your own tastes. You can add chopped peppers and mushrooms too. I cooked for 15 to 20 mins until liquid thickens then let it cool. I cook bechamel sauce, good dollop of butter or spread, melt then add same amount roughly of flour, mix on heat for min, then add milk slowly stirring all the time (off heat if you want think that's what you're supposed to do?) I don't Wink I guess-timate tbh but there is a proper way to make it. Season sauce and cook until thickened stirring all the time. Then I line baking tin or oil it. Put tortilla in it and add some filling, I add a bit of bechamel to the fold to stick it then spread some on top. Continue with each tortilla. Then I sprinkle cheese on top and bake 180C for 20 mins or until lightly browned.

The other ideas here sound lush too.

last night we had cheesy lentils. The night before it was dahl. Tonight it'll be leek and cheese pasta, then taco rice enchiladas. Thursday will be bean chilli bake and Friday chick pea and pasta soup. Nothing very exciting this week, sadly.

I made a (mostly) vegetarian dinner last night. A risotto primavera - (except that the stock I defrosted turned out to be duck rather than veg - we are meat eaters too). A basic risotto but using the first of the green things from the garden - a baby courgette, about 5 pods of peas and a decent handful of broad beans. I also love mushroom risotto and keep a few packs of dried mushrooms for this (I use the water for rehydrating them to use as part of the stock).

I am also going to have stuffed tomatoes and mushrooms for another night this week (I am indulging myself while DH and DD are both away).

I may also have a gorgonzola pasta dinner.

Macaroni cheese is another fav dinner, which always includes loads of veg - onions, garlic, mushrooms, peppers and handfuls of whatever else we have (courgette, peas, mange tout, french or broad beans.....)

While the last 3 are all veggie this way, I tend to put a packet of bacon lardons into all 3 if DH is around, as he likes his meat. And I do too, but I am happy to have veggie versions as well.

Last nights vegan dinner:

Cabbage leaves stuffed with risotto rice, onion, mushroom, and seitan. Tomato sauce with Pepperjack (vegan) cheese on top. Baked.

Pear Frangipani with a chocolate crust (dribbles)

Ottolenghi's two potato vindaloo, moong dal with tomato butter and some spring greens cooked and stirred in, rice and yoghurt. Lasted two dinners at the weekend.

Risotto with broad beans, dill, lemon and roast carrots on the side.

Polenta with smoked cheese and a kind of ratouille-esque thing made by roasting some chopped courgette, aubergine, pepper and fennel and stirring in a sauce made by just simmering down a can of tomatoes on the stove.

Ive just started subscribing to Hello Fresh, they do amazing vegetarian recipes, last week in my box i got Roasted Aubergine Salad with Pomegranate Molasses and Tomato salad, Ratatouili with Penne, south american, vegetarian paella and chinese roasted broccoli salad with orange hoi sin dressing! Never thought id be able to make any of them but all tasted so good!!
