I found a brownie recipe on here & i can't remember who posted it but oooh my gosh! Thank you! First time i made it with dairy milk both dark & milk & to be honest, it wasnt bad. 2nd time round i used sainsburys dark & milk choc. Made all the difference & whats better is...brownies have never been so easy to make & DD loves making brownies with me! Its simple. Fun. and best of all....tasty!

Ooh...any ideas on what to put in brownies...walnuts is obviously a fave but any new things that really make brownies special?

I break up a bar of white chocolate (whack it with a rolling pin while it's still in it's wrapper) and put that in.

A little bit of stem ginger blended in is lovely.
Or grate some orange zest onto the mixture (when in baking tray) just before baking - lovely fresh hint of orange.

I need to make a wow factor brownie for an event this weekend. In fact I need to make 60. So far I have practiced the BBC Good Food recipe which is deep and dense, tastes great but too gooey when cut. Hummingbird bakery recipe is too syrupy( I suspect it is the lack of cocoa). Nigella's (from HTBADG) are just not great. Green and Blacks will be tested tomorrow but I am not confident it will be anything special. I now know why I have avoided cooking them. Any tips, there is currently 2kg of chocolate, 36 eggs and 2 kg of sugar residing on my worktop. I have a fan oven and tins of every possible dimension. Any help appreciated. Thanks.

Hummingbird bakery recipe works every time for me - I generally add chocolate chips. Not sure what you mean by "too syrupy" - brownies shouldn't have cocoa in, surely?

I always use the Hummingbird bakery recipe - do you really find it too syrupy? I always get good feedback. I do the nut-free version (not the frosted recipe, just the basic)

If you mumsnet there is only one brownie recipe and that is Suzy Wongs.

Suzy Wong Brownies

A 7 or 8 inch square tin lined with greaseproof paper/baking parchment and the oven set to 180/GM4 moderate oven.

A small saucepan in to which you put

150g butter
150g chocolate, at least half of it should be plain

On a low heat and let it melt together and leave it to cool slightly

Then beat together in a bowl
2 eggs
1 tsp vanilla extract
175g caster sugar
Until creamy looking, use a hand whisk or an electric one

Then sift in
100g plain flour
1 big tablespoon of drinking chocolate
And a quarter of a teaspoon of salt

Throw in 100g walnuts
And the chocolate and butter and mix well with a spatula, but don't beat it. It should be smooth and glossy.

Scrape the batter into the lined tin and bake it for 18 minutes.

Then have a look at it, the top should be pale and opaque with a couple of cracks starting to emerge like a dried up muddy puddle. The body of the mix will still be slightly wobbly with the edges looking like ordinary cake. If it isn?t like this then leave it in for another 3 minutes or until the first cracks in the puddle surface appear.

Then leave it in the tin to cool for 20 minutes.

my DS would leave home if I made brownies with walnuts in - or diluted the sheer chocolatiness with drinking chocolate (well, he would complain about that but get over it - the walnuts would be a deal-breaker)

Have tried lots of different recipes, this one from AWT is our family favourite. We use chunks of galaxy and milkybar in ours :)

Hi, I always use this recipe, but usually make loads for events and have to cook for longer than stated, I do not overcook so they are still squidy and fudgey. Have always been to nevous to try another recipe as these are so delicous. thelovingspoonful.wordpress.com/2010/04/09/bad-ass-brownies/

i make the BBC good food ultimate brownies. Line the tin with baking parchment, lift the whole thing out when nearly cool and cut, then leave to cool completely before separating. Brownies are soggy when warm but firm when cold. They keep and freeze well.

I love Jamie Oliver's choc brownies from his 30 min meal. Total doddle. Whang everything in food processor, blend visciously, pour into baking tray, cook. They take a bit longer than he says though.

The Tana Ramsay recipe is the one that I have found make the best brownies which come out crispy at the edges and gooey inside.

I was inspired to make the Suzie Wong ones last night (thank you, Gobbler!) except I had to improvise a bit - banana instead of egg, no drinking choc or walnuts. I used some Cote D'Azur 86% stuff that was too bitter to eat may have been a year out of date due to not knowing wtf to do with it

i may have some for breakfast :o

Love AWT brownies here too. Best slightly undercooked, the put in the fridge for a few hours. Makes them really fudgey.

Erm if you need emergency brownies Asda ready mix 'just add water' ones are gorgeous! I make them cupcake sized when 'baking' with ds.

Thirding the 'Suzy Wong' ones from one here ( or certainly Soupdragon's adaptation).
Have been making them for a while now. However, rather than the dark / milk mix, I do 100% dark using Lidl's 46% strength - cuts the drinking chocolate nicely without being bitter.
Nuts are a must though - pecan, walnut or hazlenut go particularly well.
