Best things you never knew you could freeze

I made some biscuits lately- the type you roll into a sausage then cut slices, and the recipe said to freeze and slice off as required - fab, fresh biscuits whenever needed. Have you discovered or know of things to freeze other than the usual (for me that means stock/soup/chilli/bolognese/stew etc). Would love to find more!

I'm planning to experiment with part-cooked bread to see whether that can be successfully frozen and re-cooked. I know bread dough works ok, but that obviously takes time to defrost and it would be useful to be able to have a stock of rolls in the freezer that can be freshly cooked when needed.

Chopped onions - lay them on a tray til frozen and then decant to a bag after a couple of hours. Saves loads of time.

addictediam · 23/06/2012 15:53

Can you link or post the recipe for the biscuits please.

TodaysAGoodDay · 23/06/2012 15:55

Chopped up onions. Bulk buy, spend 15 mins chopping, bag up, freeze. Ready chopped onions for the next 6 months.

Coconut milk - great if you only use half a can.

Slice lemons/limes lay flat in a freezer bag, freeze. Very handy for drinks.

Haven't got any other suggestions, just wanted to say fab thread!! Thanks OP for starting it and all the contributions. Never thought about freezing some of the stuff people have said. If only I had the space and money for a chest freezer!

PissyDust · 23/06/2012 17:56

I was going to say lemons, I slice and freeze on a tray and then pop one straight from the freezer in my G&T.

Can I freeze egg WHITES?? I'm making custard and don't want throw the whites away

TheKnackeredChef · 23/06/2012 18:04

Oh yes, Shiny. They're great for meringues.

BikeRunSki · 23/06/2012 18:47

Frubes. Yoghurt phobic DS will eat 'frubicles'.

I used to work on building sites a lot and am veteran of the frozen buttie - best way to keep them fresh until lunchtime.

Leftovers of tins of baked beans and sweetcorn, great for DC's tea. I also make batches of mash to freeze in individual portions for this reason. No good with floury potatoes, and needs lots of butter.

Onions sound a great idea, do you fry from frozen?
Great ideas, thanks. Especially like crumble topping and grated cheese, have frozen grated Parmesan before.
The recipe is for shortbread thins from james martin at home..
250g butter
250g caster sugar
1egg
1tbsp double cream
300g plain flour
1/2 tsp salt
1tsp baking powder
Vanilla essence or lemon juice or ground ginger

Cream butter and sugar, add everything else and mix. Make a long roll about 5cm diameter, wrap in clingfilm and put in fridge or freezer. When wanted, slice as thin as you can and bake in oven 190 celcius/ 375F for 5 mins, tahdah Smile

Want a chest freezer even more, now!

addictediam · 24/06/2012 19:27

I NEED a chest freezer now!

ToffeePenny · 26/06/2012 20:26

Almost ripe brie and camembert - either sliced for sandwiches to stop me noshing it all in one go or whole (good for Christmas cheeseboard as it will sell out in the shops)

londonma · 17/07/2012 17:16

for curry lovers, I chop up onions, garlic, ginger, green chillies and freeze in small food bags, and take out just before making a curry. Save heck of a lot of time!

Ahhhtetley · 17/07/2012 17:20

My Mum used to always make a batch of sandwiches and freeze them, she'd then take then out of the freezer in the morning and they'd be defrosted by lunchtime and sometimes still a bit cool,

I never knew you could freeze

Bananas (good on sticks aparently)
Chocolate (yeah like it would stay in the freezer long enough)
Milk, cheese and yoghurts

Ahhhtetley · 17/07/2012 17:21

londonma what a brilliant idea!

justaweeone · 17/07/2012 17:43

Peeled fresh ginger
Then just great what you need

justaweeone · 17/07/2012 17:43

Grate

BellaVita · 17/07/2012 17:46

Par boiled potatoes - just take out of the freezer and roast.

MrsJREwing · 17/07/2012 17:47

marking my place for later

CuriousMama · 17/07/2012 17:58

Some great ideas here.

aftereight · 17/07/2012 18:02

Chocolate truffles (melted choc & double cream, rolled into balls).
Breadcrumbs.
Some great ideas here!

Advocados, only discovered this recently when I had too many ripe at one time, scoop out of skin, mash a little lime into them and freeze in bags, when I defrosted some for guacamole a fe days ago and was amazed it didn't go brown :)

I make a bit pot of mashed potatoes, scoop onto a baking sheet, freeze then bag up so I can use them as needed :)

I will freeze virtually anything except salads, even half tins of tomato puree, my freezer is like a junk yard full of half cans, half anything really!

poppyboo · 18/07/2012 17:43

Scone mixture/dough
If youre making a batch of scones and you know you won't be eating them all, just bake the ones you need. Cut out the rest and pop on non stick paper on baking tray until frozen hard and then store in freezer in a bag. When you want to eat fresh scones again, put them in the oven but bake for slightly longer until golden.
You can also do exactly the same with welsh cake dough!
