Due to an online ordering mishap I have a lot of 15 courgettes

I usually use them in pasta dishes and a Fritata-type thing

Please share your courgette recipes!

grate some into a salad

brush a little oil onto a ridged grill pan, cut the ends of a couple of courgettes off, slice them lengthways thinly and grill until tender (couple of minutes each side? bit longer?)

fish and courgette lasagne: make tomato sauce by cooking onion, can/2 cans of tomatoes, courgette, sweetcorn for 30 mins or so. Stir a tin of mackerel or tuna if you use it into the sauce, breaking it up well. Then make the lasagne as normal with sheets and white/cheese sauce as preferred.

Do an advanced search on the extremely helpful and worthwhile site known as Mumsnet.

Someone posted something similar last summer in the wake of a glut of courgettes.

Cut up however you like, fry in olive oil adding garlic and lemon juice at the end.

Then add some peeled plum tomatoes (fresh is lively in the summer but tinned fine) and some herbs you like. Lovely on toasted sourdough.

Or instead of tomatoes just do the lemon and garlic, bit of Harissa and stir into couscous or bulgar wheat.

Lovely. I serve with bacon and halloumi (dry fried or grilled) on a bed of rocket. Or top with poached egg.

In meatballs: Grate courgettes with the fine grater, add to mince meat, add garlic or paprika or whatever flavourings you like, bread crumbs if u want, roll into small meatballs and bake on baking paper at 200*C for 25-30 mins.
Scrumptious. Also works well with carrots. Serve with a tomato sauce.

These meatballs also freeze well, freeze on a baking tray so aren't touching, then bag up when frozen. To defrost stir into a tomato sauce till heated through.

use grated instead of spinach in an eggs-florentine-type recipe - ramekin of grated scourgette with seasoning, stir in a tbs of your favourite ready-made-white-sauce (we always have a half empty jar in the fridge from 2 or 3 evenings ago) or just some grated cheese, make a well in the centre and crack in an egg, bake in the oven till egg white is set but hopefully yolk isn't.

Make ratatouille (aubergines optional), top with mashed potato, bake.

We refer to this as veggie shepherd's pie although of course it's nothing of the sort, but it is lovely.

Cut in circles, Griddle them till they are still crunchy but a bit blackened, then serve with feta chunks, finely chopped chilli, little lemon zest and drizzle olive oil. Fabulous.

You can also make a nice bread, like banana bread with them.

If you are going to shred them after shredding make sure you get a lot of the moisture out. they can really make a dish too soupy if you don't. Do this by either putting some salt on them and letting them sit a bit, or just squeezing gently over the sink

Courgette, parmesan and pesto soup....this will use up loads and it's delicious

Finely chop loads of courgettes. Finely chop a small onion. Saute both in a pan with butter or olive oil. You want them to cook through but not colour too much. Add enough hot water with a veggie stock cube in to cover the veg. Simmer for a few minutes. Add whatever salt and pepper you want (plenty of freshly ground black pepper is good). Take off the heat and allow to cool slightly, then add around half a pint of milk (this hopefully avoids curdling the milk). Add a couple of teaspoons of pesto and a hearty grating of parmesan. Mix in, then return to a gentle simmer for a minute.
What I do then is liquidise two thirds of it, then stir in the remaining chunks to give it some texture.

It's one of my favourite soups, really tasty and delish with a pitta bread to mop up with.

We had joanofarchitrave's lasagne and bookmark thestringcheesemassacre's suggestion and they were lovely.

I still have courgettes left over so I have to decide what to do next.

Thank you everyone for your suggestions, they all sound delicious and I've realised they will stand me in good stead for the Summer because I have planted 5 courgette plants and there are only 2 of us Grin

Grate thrm into a clean dish cloth and squeeze out the water. Toss in feta or ricotta, mint, cumin, form into balls or patties, roll in flour and fry. Serve w sweet chili dip and a cold beer. This is our Formula 1 snack.

I made up a pasta recipe when short of proper ingredients one day which involves courgettes. I use two courgettes (but this is only for two of us), and an aubergine, along with a pack of bacon lardons and some garlic. Cube it all and fry it all off. Serve with pasta. Amazing.
