Due to an online ordering mishap I have a lot of 15 courgettes

I usually use them in pasta dishes and a Fritata-type thing

Please share your courgette recipes!

Grate into tea towel and squeeze, add an egg, some flour, cumin, salt, pepper, make into patties, fry, yum. You can add a grated onion and potato to the mixture too. They freeze really well too.

Just slice them an bung in a freezer. They can then be used when you need them in soups, stews, sauces, casseroles. I always do this when I have a glut in the summer.
Also courgette chocolate cake is yum!

Courgette ribbons - use a potato peeler lengthways on them until you have a heap of long strips. Saute them until they shrink and go golden brown then serve with a tomato+veg+cheese+whatever sauce.

Good carb-free alternative to pasta too.

Courgette fritters as per the Riverford recipe. Google it. Delicious, both the vegan and feta cheese version.

Sunshine fritters - invented once in desperation looking at a mostly empty fridge, and the only meal I have ever made where v fussy DS has said "These are delicious Mummy, can we have them again?". We now have them every Tuesday after swimming.

Make thick pancake batter.
Add grated courgette, grated carrot and a tin of sweetcorn.
Fry like drop scones.

For adult version add a chopped onion fried with some cumin and chilli to the batter and serve with chilli sauce or yoghurt sauce.

Julienne the courgettes (or slice into ribbons with veg peeler, but I prefer the little matchsticks)
Add finely chopped garlic and chilli to your taste
Lots of chopped fresh herbs (I like mint)
Make a dressing with olive oil, a little honey and plenty of lemon juice

Mix it all together. Very fresh-tasting and zingy.
Best when the flavours have had a chance to mingle, will keep a few days in the fridge.
