1/2 jar lemon curd. Apart from tarts what can I do with it?

Dd made some little tarts with the lemon curd but there's half a jar left. Don't fancy more tarts. Anyone have a recipe for a nice cake which uses some lemon curd or any other ideas?

Lemon meringue pie for pudding

I do cheesecake with 400g soft cheese, 100g Greek yogurt and 50g icing sugar. Drop the sugar and switch half the yoghurt for lemon curd might work, or keep the topping as is but put a layer of curd on the biccie base before the cheese bit... Or swirl the curd on top if you're arty I'm not

just recently had a lemon meringue pie which is why dd went out and bought the lemon curd afterwards, so don't fancy that again too soon. I think I'll try the cake. That sounds quite nice. Thanks. Wondering if I should ice it, would you make lemon icing or is that going to be too much?

You need:

1 jar Lemon Curd
1 large tub Double Cream

thats it... You'll probably need about 150g cream for 1/2 pot of curd. Whip up cream until thick, stir in the curd then shove in freezer. Stir it after two hours and pop back into the freezer. Stir again... you get the idea... stir it up another time (third) and it will be lovely. Thats if there's any left, as you need to test it each time.

Frontpaw - the lower calorie, but just as delicious, version is using half-fat creme fraiche instead of cream. fabulous!

Puff pastry. marscapone cheese with a bit of icing sugar in. Cut squares or pastry, put some lemon curd, then the cheese. Eggwash or milk round the sides, more pastry on top. Sprinkling of sugar on top. Bake.

Low fat? Why??? It has fruit in it, so it is technically healthy. Have it with a glass of red wine and there you have a heart healthy meal.

Sponge cake sandwiched with curd and plain butter cream and topped with a thin layer of runny glace icing (made with lemon juice). It's delish

curd and butter cream. Directly on top of each other?

My mind is reeling . I think since dd is back from a trip on MOnday, I'll do the lemon curd cake for that but I am also going out to buy some more of this stuff now I see how fattening and fun versatile it is.

I always do fresh whipped double cream and lemon curd in my vic sponge, as I don't like jam or buttercream.

I'd just put some plain sponge mix into fairy cake tins. Put a blob of lemon curd into each one before putting in oven.

The cake mix bakes around the curd (also works with jam) and you end up with a fairy cake with a lemonny curdy middle.

Simple and yum.
