Recipe for macaroni cheese without white sauce?

I know this is kind of a contradiction in terms, but I'm not a big fan of white sauce and wondered if there might be some recipes out there which use cream or something instead and still bake properly?

Ideally something tried and tested by an MNEr...

I always make a cheese sauce. Butter, flour, cream with a bit of water, lots of cheddar cheese, a bit of english mustard if you like it, it really does lift it, black pepper. I hope this is what you were after, as I can't stand plain bland white sauce either.

I do something very similar, but don't use milk, just thin the philadelphia a bit with water and mix grated cheese through. It is also a good sauce for cauliflower cheese.

I do love a good cheese sauce made properly as today says.

But sometimes I am too lazy and the thought of getting a bag of flour out the cupboard makes me feel tired. So the easy philly sauce it is.

You could try macaroni pudding. Mix eggs, milk and cheese and mix in the macaroni. Is nicest with crispy bacon in, extra cheese on top and ketchup to serve.

I do the Jamie Oliver one from 30 minute meals. It is basically just Creme fraiche, garlic and grated cheese and it's delicious. It's probably online somewhere.

I don't Lynette because of the white sauce aversion!

Today I was ideally hoping for a flourless recipe as it's the flouriness of white sauce I'm not keen on (even when cooked in properly) though I agree it would be much better with the mustard cheese and cream added.

Umami that one looks fantastic thanks!

my very lazy cauliflower cheese (adapted from one of the low carbers' recipes) is made with a sauce which could probably be used for macaroni cheese too. instead of putting on top of steamed cauliflower put on cooked pasta and pop in oven

half tub philadelphia
single cream (about 100ml)
100g grated cheddar

mix together add pepper or mustard if you like and mix in pasta. it won't be very runny, more sort of spreadable. then stick in hot oven until golden on top

the above would probably make enough for two? You might need to experiment a bit because I don't measure and the above are estimates

I have made it and was really disappointed - I found it rather tasteless. It needs far more cheese than the recipe states.

philadelphia rather than creme fraiche may do the job.

OOh I have never tried it with cream willi.

That would be DELICIOUS.

I sometimes add some dijon into the mix as well. It doesn't make it taste mustardy but gives it some extra vim.

bun I always use more cheese than the recipe suggests. however, that one is really tasty with the breadcrumb and bacon herby topping, which makes up for any lack of cheese!!

i saw one on hugh f-w's programme the other day. i don't have the recipe but it went something like this:

Cook the macaroni as usual seperately.

Meanwhile, boil some frozen peas in the usual way. While these are cooking, lightly saute some crushed garlic in another pan - very gently, not enough to brown it.

Puree the cooked peas in a blender, leaving a handful aside. Add in the garlic and the oil it was sauteed in. Add some grated cheese into the mix, amount to suit your tastes.

Mix the macaroni with the sauce, add the remaining whole peas and add extra grated cheese if wished.

I haven't tried it yet but it sounds delish, contains green veg (Sort of) and doesn't require a white sauce!

If you haven't got cream but want to avoid the nasty chance of uncooked flour in a roux based-sauce try a heaped table spoon each of plain flour and butter in a COLD pan with approx 3/4 pint of milk. Whisk until thick and simmering over a medium heat. Season to taste, mustard, garlic, chopped herbs etc.

I think creme fraiche would work, I've used this instead of bechamel sauce for a quick lasagne. It's not the same obviously but it's nice in its own way.

Try this one. Its only milk/cheese/cornflour & seasoning. Very quick, easy and yummy, its the only version I use now.

Just to add, I know you dont like the flourness, but the cornflour is just to coat the cheese so that you get full cheese flavour without the flour masking any taste.
