Quick everyday baking ideas wanted please

I use to bake lots....I rearlised last week that i don't bake regularly anymore.

I would love to have a regular baking slot in a week (work 4 days so not a lot of time).
maybe on a Sat afternoon and then I could freeze some for the week ahead

What quick bakes do you recommend please?

We quite often do a banana and gingerbread cake at the weekend to use up ripe bananas - the recipe fits nicely into two loaf tins, so one to eat and one to freeze.

MarsLady lemon drizzle cake is another quick and easy one - it's on the recipe section here.

I also cheat and do Betty Crocker brownies out of a packet, but that may result in my permanent banishment from the baking section...

The best brownie recipe ever, and not much more complex than BC, is Suzy Wong's one. I have found it is even better if the milk/dark chocolate ratio is 100g milk to 50/60g dark (70%). Grin

Rachel Allan's Sticky Gingerbread is amazing and keeps perfectly in a tin

flapjacks also improve for being kept

Almond Shorties very easy and agreeable recipe, re rolls beautifully right to the last bit for the last biscuit

All in one Victoria sponge is good, with vanilla icing and strawberry jam.

Flapjacks? Apple and cinnamon cake? Raspberry & white chocolate muffins? Banana muffins or banana bread?

Avocado - I use betty Crocker but add chopped nuts, a bit of cocoa powder and OJ instead of some of the water. They're better than most brownie recipes from scratch.

Cut & pasted from another thread:

Something quite common here is a "cake salé" or savoury cake, usually with ham and green olives. Here's the basic recipe which can be tweaked (replace the ham and olives with anything you like, fried onions, sautéed peppers, crispy bacon etc swap the gruyere for cheddar, Stilton or goat's cheese for a stronger flavour etc.)

Ingrédients (pour 6 personnes) :

  • 150 g de farine ( self raising flour )
  • 200 g de jambon ( ham )
  • 150 g d'olives vertes dénoyautées ( pitted green olives )
  • 75 g de gruyère râpé ( grated gruyere cheese )
  • 4 oeufs ( eggs )
  • 10 cl de lait ( milk )
  • 1 cuillère à soupe d'huile ( dessert spoon of oil )

Mix the flour, eggs and milk with the kbeater, add the oil and cheese, then the other ingredients. Pour into a greased loaf tin. Bake in a preheated oven (180°) for about 45 minutes.

It freezes really well, just stick it in a warm oven for ten minutes to defrost.

I only started baking two weeks ago.

Recipes I find quick and easy at the moment are: Soda Bread and Naan Bread.

Snickerdoodles (nigella) these are total store cupboard recipe and always go down a treat
The Betty Crocker devil food cake mix made into buns with ganache/Turkish delight/peppermint frosting

Ginger cake, banana and chocolate chip loaf, lemon madeira cake, boiled fruit cake, fruit tea loaf. Also flapjack, brownies or cookies (choc-chip and nut, or oat and raisin). I regularly make all these, they're easy and reliable, and good for packed lunches etc.

I haven't tried freezing any of the cakes, though I do freeze uncooked cookie dough.

I make this traybake alot and it freezes well.

I also change from blackcurrant bakewell by replacing the almond essence and blackcurrant jam with lemon oil and lemoncurd.

Thanks to this thread I will make some jam tarts. Remembered I froze some leftover pastry from a bakewell the other week.

Manor cake (a la Mr Kipling):

225g self raising flour
2.5 ml (1/2 teasp) ground mixed spice (optional)
100g castor sugar
400g dried fuit (any combination)
100 ml oil
100 ml milk
2 medium eggs
2.5 ml almond essence (optional)
Grease and line a 7in round cake time. Preheat oven to 160c.
Beat all ingredients together, spoon into tin, level top, sprinkle with demerrara sugar and bake for 1 hr 30 mins or until a skewer comes out clean.

literally 5 mins to get it in the oven, and an hour to enjoy the fact that it fills the house with lovely cakey smell Grin - and everyone at work scoffs it.
