Would anyone care to share any novel fish recipes, please? I already make fishcakes, haddock or mackerel risotto, fish pie, salmon dishes (ie wrapped in pastry, with pasta), sweet and sour cod, and a few others involving prawns. Tried cooking sea bream for the first time at the weekend which was quite nice.

I'd love to cook more adventurous recipes with more unusual fish but am put off not knowing what to do with them!

we like cod/haddock/monkfish wrapped in parma ham with a layer of tapenade between the ham and the fish. wrap in foil and pop it in the oven.

also this smoked haddock recipe is really easy.

or a fish soup?

Thanks, Charlotte x We eat loads of smoked haddock already so it's good to know a different way of cooking it.

I like to microwave it with leeks, a little water and double cream and thinly sliced potatoes on the top. Then pop it under the grill with loads of parmesan sprinkled over. Yum.

We are having haddock chowder/cullen skink this week.

I do lots of putting fish in parcels in the oven with various veg/herbs/splash of wine.

Have you tried Japanese-style fish? Mackerel in miso is fantastic and so easy - I cook mine on the hob and it takes so little effort and time. Serve with rice.

Fish baked in a salt crust? We do it with sea bream (think it is - dorade in French).

Bake white fish in the oven, mix grated cheese with creme fraiche and spread over the top. Put back in the oven until browned on top.

Serve you roasted white fish with bacon with one of these:

Garlic green beans

Sweet chilli green beans

I threw in mange tout, sugar snap peas and baby corn too.

Fish and chip pie - I don't like peas in fish pie so I will substitute with spring onions, spinach, leeks and inch size pieces of asparagus. I also find adding smoked bacon adds a nice extra flavour rather than just using smoked fish.

Red mullet fillets with peppers.

Cut an onion into slices and very gently begin to fry in a tbsp of olive oil. Cut one red and yellow pepper into long thin slices and add to the onions, cook gently (you don't want them browning) for five to ten minutes. Add a glass of sweet white wine, a pinch of saffron and a tsp of dried fish stock. Simmer gently for ten minutes. If you prefer a creamy sauce you can add a spoon of creme fraîche at the end.

Heat a splash of olive oil in a non stick frying pan. Make sure the fish is nice and dry before putting it skin side down in the hot pan, after a minute or two (depending on the size of the fillet) before gently turning over and cooking for another few minutes.

Serve the fish, peppers and sauce with new potatoes.

Smoked makrel pâté is another favourite here.

In a blender mix one packet of smoked makrel (you might have to faff around removing bones first), 2 tbsp of creme fraîche, a squeeze of lemon and some black peppers.

Serve with crudités, crusty bread or crisps.

The July edition of Sainsbury's magazine has a great recipe for seafood spikes with cashew sambal. Sorry couldn't find it online to paste in here, but it was a big success in our house!

Mix breadcrumbs with any or all of the following: dried oregano, dried basil, chopped rosemary, minced sundried tomato or paste, minced olives, crushed garlic.
Add olive oil until you can stick the breadcrumbs together to make a crust.
Pile on top of fish fillets (salmon is great, or any white fish) and bake till brown on top and fish is cooked through.

This is great too - loads of recipes but this one is closest to the one I make:

Salmon pasta An alternative is to use a whole piece of salmon on top. This dish is also nice with other herbs like parsley and chives and asparagus or green beans. For a richer dish you can use double cream and olive oil instead of creme fraiche. I use about 6 tbsp of double cream and 3 tbsp of olive oil.

tuna meatballs I reckon these would work with salmon too.
