Roast Chicken leftovers

I'm sure this has been done before but would love some inspiration for that post-roast/pre-stock moment! Love the roast, love te sandwich the next day, love making stock for soups and risottos but have never managed to do anything terribly exciting with the left overs before I use the carcass for stock. Who can inspire me with something which doesn't involve tinned tomatoes and some chopped onion? Thanks!

we have quesadillas.
cover the shredded meat in spice mix
fry peppers, onions
grated cheese and jalapenos
put all together and fry

serve with guacamole and salsa

We have a chicken supreme type thing with rice.
Can of campbells condensed chicken soup, thinned with milk, lemon juice and taragon. Add the cooked chicken with some peas/green beans/sweetcorn.We like it.

I use it to top pizzas, or chicken noodle soup, or make chicken mayo for sandwiches, chicken fried rice, chicken cakes (with mash, sweetcorn & breadcrumbs) and many other things that I cant think of right now!

someones allready said quisadillas/pizza

but my dh makes an awesome chicken & veg soup with the grey meat

I often do a stirfry - red pepper, onion, baby sweetcorn, shredded roast chicken, then half-and-half sweet chilli sauce / soy sauce. Served with noodles takes about 10 minutes.

Chicken noodle salad - great for lunch. Cooked egg noodles, cooled and dressed with asian type dressing (lime, soy, sweet chilli sauce to taste). Add finely chopped spring onion, cucumber, shredded chicken, green beans, toasted sesame seeds.

Ainsley Hairrots, meals in minutes Lamb! Biryani, tho obviously I use the left over chicken rather than his Lamb. It's not at all authentic I wouldn't think , but is very quick and easy and tastes good

Yep, quesadillas or with some bacon, leek & white sauce topped with shop bought puff pastry for a pie. Used to also do oriental-ish noodle soups with the stock and plenty of veg, garlic, ginger, chili... but that's now out as DDs would turn their noses up at it and I don't do two dinners :-(

surrounded, I don't do two dinners either, but it does mean I eat a lot of boring food! However, when I do oriental soup from chicken leftovers, I add the ginger/chilli etc at the last minute, after I've taken out DCs portions. Do the same with Chilli Concarne too.

oooh, good idea. Just did quesadillas tonight. Think I might need to do another chicken next weekend. Just thinking about noodle soup was making me feel wistful. I can't claim that mine were in any way authentic, but they were damn tasty

Thai chicken soup recipe

I use a pack of the mixed exotic mushrooms from Sainsbo's (Tesco do similar) and one bundle of ramen noodles which i drop in after cooking and leave to cook as it cools down. It is much better prepared in advance, hence this works well. if you do add noodles you will need more stock (but if you have it from the carcass you should have plenty)

Curry of any kind. Thai green is nice with chicken.

Chicken pasta bake - with cheese sauce, maybe bacon, mushrooms, sweetcorn, broccoli...

Probably teaching grandma to suck eggs, but use some of the meat in the risotto?

We like it in salad which we serve in tortillas baked in the oven inside a wire sieve to make a basket. Or shredded over pasta mixed with pesto or on crusty bread with cranberry sauce or in chicken fried rice.

Shred it with mayonaise and lime juice and make/buy guacomole, sour cream, refried beans, salsa, shredded lettuce and tomatoes and it makes a fab mexican dinner or lunch - add fajitas or tortillas or deep fried tortillas.

Hi Pedwar, we had it last night!

To serve 4

1 tsp each ground turmeric & cumin
1/2 tsp each ground coriander and chilli power
pinch of cinnamon
2 tablespoons veg oil
left over chicken
8oz basmati rice
1 onion
Chopped Veg (whatever I have that needs using, but usually including frozen peas)
1 pint veg or chicken stock

-Mix the spices with 1 tablespoon oil and mix in chicken to get covered with oil
-Heat the rest of the oil and fry onion and slower cooking veg (eg carrots/celery/squash)for a few min
-Add chicken and spice mixture
-Stir in rice and stock, bring to simmer
-Add veg such as cauliflower/broccoli
-Cook 8-10 min
-add peas/sweetcorn etc and cook another 2 mins until stock absorbed and rice tender )sometimes need to add a drop of water from kettle

If there wasn't much chicken left, I sprinkle toasted flaked almonds on top which are delicious and add a bit more protein

I shall do a stir fry tonight. Marinade chicken in light soy sauce, five spice, honey, garlic & ginger

Stir fry veggies of choice, more soy sauce, sesame oil, rice wine or sherry (if you have it). Handful of peanuts or cashew nuts

Serve with rice or noodles

Chicken laska
Chicken Divan (bake with brocolli, condensed soup, creme fraiche, curry powder and cheesy breadcrumbs....sounds grim - is lovely!)
Creamy chicken gratin (chicken and leek in cheesy/white wine sauce with slices of garlic bread on top, baked)
Chicken enchiladas (tomato-ey chicken in a tortilla wrap, creme fraiche, bit of salsa and cheese over the top, baked in the oven)
