6 million beetroot in my veg box this week, what do I do with them?

Well, maybe only 4.... but I still need ideas. I had them last week, had never cooked them before, so boiled them and put vinegar on them. They were nice, but I feel I have "done" that now

Anyone got any great recipes? Quite fancy roasting them, but will that take forever?

You could grate them into salad, or make a risotto with some grated into it, or soup? (both of these last ideas will be very pink, but tasty Grin)

(and worktop..... I am quite a messy grater)

Roast is bloody gorgeous. Wedge or chunk it and do with very very little oil, whole garlic cloves and fresh thyme. About 20 mins.

I steam beetroot then blend it to a puree. We have it in risotto a lot, I sometimes mix it into homemade burgers, beetroot brownies are good. I made a beetroot soup that was yummy.

Sausage, puy lentil and beetroot stew. Is delicious.

And it's wonderful roasted.

Yes, beetroot 'bleeds' everywhere so be very careful if you grate it. It could stain your worktop. It does take ages to roast but it's so yummy. I chop it into smaller pieces to speed up the roasting process.

Roast beet root with balsamic vinegar is lovely. I think it's a River Cottage recipe.

Roast in chunks (peel under tap to keep hands clean) with olive oil, salt pepper, but of thyme and as you would roast potatoes. Purée left overs and stir into risotto then crumble over some goats cheese - yum!!

NIgel SLater's cake is the BEST for using beetroot and "seems" haelathy what with the seeds and all Wink. Make several and freeze them - it's what I do!

I don't peel when roasting just give them a scrub then dry off. To avoid murder kitchen look I use to foodpro to grate them, love them in salad/coleslaw

I would maybe caramelise them with some red cabbage, or just by themselves and serve them beside something.

I'd also remind myself that I'd eaten it next time I went for a poop before I had a heart attack and thought I was dying of bleeding from the bottom.

This recipe for beetroot and orange chutney is lovely but add some grated horseradish to pep it up a bit.

Roasted in tinfoil is very nice too.

Lol at "murder kitchen look" and "dying of bleeding from the bottom" Grin

Prob have enough to do a savoury thing and a cake/brownie thing, but.... do you get purple fingers from eating the cake/brownies? I have 2 very messy children, they would be guaranteed to get it everywhere.... is this a sensible grown-ups kind of cake?

Cake is brown with purple low lights. You shoud be safe! Although it is always prudent to save cake for the grown ups.

Oooh I never noticed I had red pee as well.

Terrifying stuff, beetroot (and weirdly fashionable - seen it on at least 3 different menus recently).
