Anyone got any yummy recipes for muffins???

I've got 2 new muffin tins - a mini one and one of those silicone ones and I'm itching to try them out. Will need to be with what I have in the cupboards though.

I like chocolate (natch!), nutty ones, fruitey ones, all kinds

Also, Oh domestic Goddess Soupy - I have found a chocolate muffin recipe but there is very little liquid in it - just oil and 1 egg and vanilla essence. No milk - can that be right or did I copy it down wrongly?

Um... thought that all the muffins I made had more liquid in them (either milk or because they have something "wet" like pumpkin in). Not 100% sure though.

Carrot muffins are nice - like carrot cake only, er, muffin shaped .

I put milk in (about the same ammount as the fat) and it looked better. They have come out well (apart nfrom over filling the tins and not being ablke to get themn o8ut of the tin whole. Should I have cooled them in the tin before turning them out?

The chocolate muffins in that book have 9fl oz milk in them BTW. Some of the "wetter" ingredient ones only have 2 or 3 fl oz.

According to my muffin book, cooling them in the tin for "several minutes" makes them easier to remove.

Cooling them in the tin also makes removal of the paper cases easier too. Apparently.

I like the sound of chocolate cheesecake muffins. There's a recipe for them in my muffin book which looks similar to this linked one.

The book is great - we make banana and choc chip, also cranberry muffins and blueberry muffins regularly.

ah you can't go wrong with the Reimer muffin book, it's brilliant

dd is addicted to my blueberry muffin, I make a weekly batch!
Also like the orange ones, the apple and cinnamon ones, the choccy ones obviously, the cheese ones, the corn ones, arghhhhhhhhhhh
