How do I make a salmon fillet more exciting?

I've got loads in the freezer and am getting bored with wrapping them in foil with a bit of lemon and coriander.

Wrap in a coule of slices of Parma ham.

Or Marinade in soy, honey and ginger.

I like marinating them in a Teriyaki marinade and then grilling them. Very easy. Lovely with rice and green beans or broccoli.

My 3 dc gobble it up when cooked in foil with pesto, not exactly more exciting - but popular. In fact - that's not too different from coriander, sorry! Xmas Grin

If you like chilli then a really nice recipe is to blend together (per person/per fillet) 2 cloves of garlic, an inch of fresh ginger (peeled), half a chilli and a pinch of salt with a tablespoon of olive oil.

Blend it with a hand blender until smooth then spoon over the fillets and bake in the oven uncovered until the salmon is cooked and the garlic mix is brown and bubbling.

It's GORGEOUS and very easy.

You can also do it without chilli for a milder flavour.

pesto mixed with breadcrumbs to form a crust

brush them with curry paste and bake

do them with watercress sauce

I used to have a lovely fish herb mix which contained seaweed. That was nice baked in foil with a bit white wine.

Fish pie with prawns

poach them, flake and make up a nice salad or couscous dish with them.

Poach them in milk, flake them into chunks and add to a creamy pasta sauce with broccolli and black pepper.

Quodlibet beat me to it! I use this recipe. Black pepper optional - it does change the flavour, is nice with or without, or even cold. It's quite a summery dish though, I think.

Poach in teriyaki sauce. Serve with jasmine rice & small broccoli florets with sauce over.

Make into fish pie. I use bought puff pastry and salmon for a pie much like Delia's.

Poach in milk. Make milk into white sauce. Serve together.

Wrap in foil but ring the changes: pepper, salt, olive oil, dill, butter...

Dare I say it, but try using Philadelphia? Excellent when you have very little time and can just stick in the oven or mix in the wok with sons pasta etc. recipes on the website..... Sweet chilli one good with fish, and garlic and herb

Paint it with maple syrup and either bake or grill.
Serve the salmon hot with cold avocado, sour cream and dill or corriander dressing/sauce.

Creme fraiche and chopped chilli on the top, then wrapped in foil and baked. I'm having it tonight.

Sliced red onion, craisins, roughly chopped flat leaf parsley and dill, a tbsp of wine vinegar, tbsp sugar, tbsp olive oil, pinch salt and pepper all mixed together and spread over the salmon. Cook covered. Looks great because of the colours and tastes great too.

poach in lime juice, drizzle with honey and lemon, make a salmon kiev with philadelphia and breadcrumbs.slice up and add to a stirfry, wrap in puff pastry with pesto or cream cheese.

Mix together butter, lemon juice, raisins, lemon zest and Chopped stem ginger in syrup , put on top of the salmon fillet and wrap the whole lot in puff pastry and bake until golden, yum yum.

Marinate in soy sauce, mirin and sugar. Stick in a pan, dry fry, then tip the marinade over, and throw in some rice wine. Fantastic and always very popular.

Basil pesto over the top with a layer of breadcrumbs/cheesy breadcrumbs on top of that... lush!! x

Yep, red pepper flakes are the American equivalent of chill flakes Smile

A side note - I always save the extra marinade and cook it down a bit (sometimes with chicken stock or white wine) to use as extra sauce. Usually serve with rice and steamed broccoli. Divine!
