following on from the frugal living thread I thought it would be good to exchange budget healthy meal ideas as I'm sure we all cook the same thing over and over.Mine is loads of veggies, tinned tomatoes and chilli cooked slowly all day and served with crusty bread and sour cream

baked potatoes with baked beans, cheese and salad

or

stir fried broccoli with garlic and soy sauce
followed by
miso soup with noodles and greens

mince is best thing to keep in the freezer along with tinned tomatoes, tomato purree, and lots of lentils etc.

tonight we are having shepherds pie, with purred veg mixedwith the meat (my kids ont eat vegetables atm, grr).

also eggs. lots of eggs being used in my house atm. dd1 loves scrambled eggs on toat, i make pancakes a fair bit too.

Pasta with bolonaise sause cooked from scratch. make a big pot and then freeze it

make a huge batch of mince

use for cottage pie, moussaka, mix with tomatoes for bolognaise

long cooked slow stews from cheaper cuts of meat - I use lamb breast which is laughably cheap but does need to be coooked for ages to get all the fat off

stick lentils in curries and stews to make them go further

mine is veggie stew.
so easy.

just chop onion and fry off... then add whatever veg you have and some stock. mixed herbs and lentils
leave to simmer for at least half an hour

Potatoes (from the 5 quid for 25 kg bag) & veg bought 1/2 price at the end of the day from the market, laced with butter. Very very cheap way to eat -- relatively fewest pence per calorie (about 6p/100 kcal for the potatoes).

mine is home made meat-balls with pasta in a sweet chilli sauce, with crusty bread and salad....

Dhal, rice and salad (tomato,onion,wine vinegar/and or raita)

Spaghetti with olive oil, garlic and chillies (+ salad)

Spaghetti with butter, olive oil, garlic and parmesan (+ salad)

Mince and potato curry, with rice

Leek and potato soup

Got load of these types of 'recipes'

Tuna pasta, omelette type things with leftover potatoes, ham etc chucked in and spaghetti with pesto and grated cheese - these always signal the end of the month (or the money!) in our house!

I like a nice beef stew.....particularly this time of year. The tougher the meat at the start the better and cook it for ages. Yummy!
