following on from the frugal living thread I thought it would be good to exchange budget healthy meal ideas as I'm sure we all cook the same thing over and over.Mine is loads of veggies, tinned tomatoes and chilli cooked slowly all day and served with crusty bread and sour cream

I only cook stews in mine, but when I am at the hospital all day with DS its great as I can prepare everything before we leave and know I have a meal when I get home.

veg dahl (sp?) with brown rice

just onion, carrot, corgette, mushrooms, cauliflower and lentils, veg stock cube and a spoon of curry powder.

also do this if we have visitors and add some cashew nuts to make it a bit more special.

beef, carrots, onions, leeks, parships and any other veg you fancy and beef gravy made quite watery. Bung it all in, and leave it to cook, then about 45 minutes before you dish up, made the dumplings and pop them in too.

three types of tinned pulses (eg, haricot butter beans and chick peas) cooked slowly with tomatoes, onions, garlic, all the usual veg and I often chop in an apple or so.

I also do a good veggie curry (passata, low fat yoghurt, lentils and diced cauliflower with spices) and a seafood curry that just needs cheap white fish, passata, plain low fat yoghurt or fromage frais and a pack of the mixed seafood that costs £1.49 in Asda. An onion and garlic and we consider it a proper treat meal.

bean casserole (v windy!) - flageolet beans, tomatoes, onion, butter beans, garlic served with rice

other cheap but nutritious meals involve tinned fish like mackerel/sardines/salmon/pilchards - either I mix mackerel and salmon and make a fish pie (with either creme fraiche or cheap white sauce) or with sardines/pilchards put them on toast.

Mousakka from the dinner lady. mince, 2 tins of chopped toms with herbs, boil and cut potatoes into slices. Layer the mince and potatoes and finish off the top with cheese sauce. A real favourite in this house.

Infact a lot of the dinner lady recipies are really cheap to make.

It is (relatively) if you buy lean steak mince and eat it once in a while - def fine for kids under 5.

But it is cheap and sometimes needs must

nooo. normal mince is healthy per se as long as it is 100% meat and you don't just eat it on its own.

there is no such thing as an unhealthy food - there are only unhealthy diets.

chickpea and fried onion/cumin. Served with bread/rice/whatever is to hand.

pasta, peas, grated cheese and black pepper.

chilli/bolognese with veggie mince, tomatoes, bag of fresh carrots plus spices

Pasta Puttanesca. You have to invest in a jar of black olives and a jar of capers but they both last for ages. Oh and a tin of anchovies but they're not much. Basically - get your pasta cooking (any kind). Fry up the anchovies (they come in oil so no need to add any), add a couple of cloves of chopped garlic, couple of handfuls of stoned black olives, and about 3tbsps of capers (drained). Tin of tomatoes and simmer it for a bit til the pasta is cooked. Fresh basil if you've got any. You can also chuck in a couple of tins of tuna if you want though I usually don't bother.

Lentil dahl and lentil hotpot are staples here too. Can provide recipes if anyone wants them.
