Veggie meals for non-veggie family?

We're having to tighten our belts, so are thinking of having veggie meals a couple of times a week. I make most things from scratch, and but have a limited veggie repertoire - potato and chickpea curry, potato tortilla, spiced split pea soup (made nice and thick with extra veg thrown in), pasta and tomato sauce - but could really do with some more ideas.

Does anyone have any favourite (cheap!) recipes they'd care to share? Preferably heavy on the carbs so nice and filling

Having to pop out soon, but will be back later on today!

Macaroni cheese

Cheesy vegetables (cauliflower, brocoli, carrots, leeks) on a baked potato

Veggie shepherd's pie. Basically make a bean casserole and top with mashed potato. It's really nice if you do a mix of white and sweet potato. It's really filling and satisfying, especially when the weather is cold.

Daal is really cheap to make and bloody lovely. Perhaps not a meal in itself (although I do like daal and chapatis for lunch) but it freezes really well so is handy to have around when you make a curry as an extra side dish.

I always tell people on MN to make black bean chilli. It's cheap and very easy. The recipe does the 4 of us for 2 meals usually.

Fry 2 chopped onions and 4 cloves of minced garlic in some olive oil for about 5 mins.
Add 3 tbsp of paprika and 3tbsp of cumin (ground or not it'll still work). You can add some chilli too if you like. Cook for a couple on minutes.
Add 3tbsp cider vinegar, 2 tbsp sugar and 2 tins of chopped tomatoes. Cook for about 10 mins.
Add 2 tins of black beans (drained and rinsed) and cook for another 10 mins.

Serve with rice and soured cream/cheese/whatever else you'd like. Also good as burritos or enchiladas, or baked potato topping.

Roasted veggies- leeks, parsnip, carrot, courgette etc, in cheese sauce served in Yorkshire puddings made in cake tins.

mmmm, black bean chilli sounds good, and I make a mean toad in the hole (if I do say so myself Blush )so I'll def give the veggies in Yorkshires a go

We had roasted veg tostadas for dinner the other night- bloody gorgeous. Roasted mediterranean veg piled onto a grilled tortilla, add rocket, avocado, chopped tomato and feta. Really tasty

Mushroom stroganoff? Sauté lots of mushrooms in garlic with splash white wine, add cream, serve with rice. Use fancy mushrooms if you've got spare cash but is lovely with bog standard ones too.

Risotto is very filling in the winter

I love roasted veggie moussaka - chuck a load of root veggies in tomato sauce, then a layer of sliced aubergine, then cheese sauce, then more cheese.

White sauce with goat's cheese and peas on pasta is pretty easy. Or, if you're feeling really lazy, stir goat's cheese and frozen peas into hot pasta Blush

We have also cut back on the meat. I have had to find things that are convincingly ok and not just a thing without meat, if you see what I mean! Eg, veggie curry rejected!

Big mushrooms baked in butter and garlic as a change from burgers.
Halloumi thrown into a big dish of roasted veg makes it more interesting and goes a long way, with cous cous.
Jamie courgette carbonara
Nigella does a marmite pasta - sounds grim but is gorgeous.
Ottolenghi does a recipe for green pancakes with chilli and spinach to make them green, they are very tasty indeed.
Puff pastry rolled out thin and then add fried red onions and cheese or any veg for nice tart.
Falafel
Butternut squash stuffed with blue cheese and walnuts (maybe a Hugh thing)

This is one of my fave veggie suppers and you can use stale bread and chuck in whatever you've got. Really yummy and lots of carbs :)

I suggest sweet potato and apple soup (I don't think sweet potatoes are as common here as they are in the States where I'm from, but are wonderful and filling), would be happy to post my recipe if anyone is interested.

Homemade pizza has been a fantastic option for us also- I like to do this one with children because they can't really get it wrong and it's fun to top it with stuff and watch it in the oven. Canned plum tomatoes and a little basil make a great simple sauce. You can make dough at home or just buy a bag of dough ready to roll out.

Veggie jambalaya is also great if you like spicy food. You can throw in anything you have in your fridge or freezer and add really any spices you like. Frozen fish or sausage is fine in this one if you have some you'd like to use.

Three of us are veggie and dp eats veggie most of the time at home. Some of our current faves are:

big pan of veggie soup with good bread and cheese, followed by a hot pudding such as rice pudding or a crumble

a baked risotto using leeks, frozen peas, frozen broad beans and jarred artichokes - can post recipe if wished

curries of many shapes and form - Thai curries, chickpea curries, potato curries, butternut squash curries etc etc

caramelised onion quiche with roasted garlic new potatoes and either salad or steamed vege

veggie sausage casserole using green lentils and veggie hotdog sausages, flavoured with grainy mustard, honey and lots of paprika

wraps stuffed with cooked sweet potato and squash mixed with fried spiced onions, chcikpeas and spinach then topped with cheese and baked - to be eaten with salad, soured cream and homemade salsa

Use a pan that can go on the hob and then in the oven, to save on washing up.

Finely chop an onion, tow leeks and a couple of cloves of garlic and fry lightly in olive oil to soften but not colour.
Add a big splash of white wine, some fresh thyme if you've got it and lots of black pepper then a big spoon of green pesto.
Add 5oog of arborio rice and swish it about a bit until the rice gets all green and wine-y and nice.
Add just over a litre of stock (I use marigold) then whack in the oven for fifteen mins or so.
Take it out and add a handful of frozen peas and another of frozen broad beans, lots of grated parmesan and some chopped jarred artichokes. It may need some more hot water or stock too.
Cook again until the rice is ready.
We sometimes stir in some rocket or spinach at the end; sometimes add asparagus when adding the frozen peas etc. Sometimes a squeeze of lemon - sometimes pesto sometimes not; sometimes a big dollop of cream or creme friache or even Philly. It's lovely.

Ditching the wine will be fine.

How long it takes altogether varies a lot tbh - after you've put the extra ingredients in, check after ten mins but it may need up to twenty. I cook it on 200 degrees C.

Moroccan chickpea tagine is lovely with chunks of sweet potato in to bulk it out. Serve with rice, cous cous or flat breads.

I like coconutty Thai veggie curries - red, green or 'jungle' - and they are very easy to make.

Vegetable lasagne is great - substitute meat for ratatouille or thinly sliced peppers, aubergine, mushrooms etc

Spicy beanburgers are good. Loads of recipes online.

Veggie chilli is something I make ahead, freeze and then defrost and reheat on days when I really cannot be arsed to cook. Good with rice or as a filling for baked potatoes.

Veggie enchiladas or fajitas (lots of chargrilled veggies instead of meat) with guacamole, grated cheese, salsa, soured cream etc).

Halloumi tray bake is good - just cut up bell peppers, onion/red onion, poatto or sweet potato, courgettes or whatever veg you like, drizzle with olive oil, sprinkle over whatever herbs you like and then top with chunky slices of hallpoumi and roast on a high heat. Very yum.
