Veggie meals for non-veggie family?

We're having to tighten our belts, so are thinking of having veggie meals a couple of times a week. I make most things from scratch, and but have a limited veggie repertoire - potato and chickpea curry, potato tortilla, spiced split pea soup (made nice and thick with extra veg thrown in), pasta and tomato sauce - but could really do with some more ideas.

Does anyone have any favourite (cheap!) recipes they'd care to share? Preferably heavy on the carbs so nice and filling

Having to pop out soon, but will be back later on today!

3 medium sweet potatoes
1 small onion, chopped
2 cloves garlic, smashed
1/4 teaspoon freshly grated nutmeg
1 1/2 teaspoons curry powder
Pinch of ground ginger powder or fresh if you like
2 cups low-sodium chicken broth (I've also just done this with 1.5 cups water and bouillon cube)
1 1/4 cups chunky applesauce (if you have some extra apples that you don't want to go bad, just chop them up coarsely and put them in a non stick pan with med heat, mashing them against the sides. this works fine for the soup.)
1 tablespoon extra-virgin olive oil
1 tablespoon apple cider vinegar (or lemon juice if that's what you have)
1 to 2 tablespoons chopped fresh cilantro
1 small handful of grated extra mature cheddar

Add the onion and garlic and cook until soft, about 5 minutes. Stir in the ginger, nutmeg, 1 1/4 teaspoons curry powder, and salt and pepper to taste and cook until toasted, 1 more minute.
Add the diced sweet potatoes, chicken broth and 2 cups water to the pot, cover and bring to a boil over medium-high heat. Reduce the heat to medium low and stir in the applesauce. Simmer, covered, until the sweet potatoes are soft, about 20 minutes. Add in the cheddar, slowly stirring. Puree the soup with a blender until smooth, or for heartier soup, mash all chunks against the side of the pot with a wooden spoon. Season with salt and pepper.
This is great on it's own or you can top it with:
Heat the remaining 1 tablespoon butter in a skillet over medium heat. Add the remaining 1/4 teaspoon curry powder and cook, stirring, until browned; remove from the heat and add the vinegar. Top with the curry butter and cilantro. Or simply a dollop of soured cream.

Loads of pasta dishes are veggie and both quick and economic to make.

I make loads from the Ottolhengi veggie cookbook and like Hugh Fearnly-Whotsisface's new book too. Favourite recipes have been
-soba noodles with fried aubergine and fresh mango
-beet root and feta tart
-butternut squash and chickpea coconut curry
-chaksouka (a dish with onion, red pepper, tomato and spices where you throw an egg on top and cook until it is soft-cooked)
-splouflee (a pasta dish baked with a souflee like sauce)
-various veggie soups made substantial with barley or pulses
-sweet potato fritters

You might be able to get Rose Elliott's Bean Book from the library - fabulous recipe for black eyed bean shepherds pie and mushroom and lentil slice.

Lizzie Spender's book Vegetarian Pastability is good, but sometimes a bit fussy when you're in a rush. Though her fusion stuff is good.

and will try to post marmite recipe later from home, sophia, where I have book. But if I remember rightly it's just spaghetti and marmite!

My hubby is partial to peanut butter on pasta (but has yet to persuade the rest of us of its merits.)

A few of our veggie favs include:

home made pizza

baked potatoes, cheese, beans and pickle

veg stew with dumplings

rice and daal - with mango chutney, a dollop of yoghurt and if you are feeling adventurous home made naan its definitely a complete dish. We use a bread maker to make the dough and then you cook it in minutes under a hot grill.

My standby cheat is a can of condensed mushroom soup - fry up some mushrooms, and canned sweetcorn add the soup and add the soup and dilute to the consisency of your choosing. Chuck it on pasta, or cover with par boiled potato and whack in the oven.

I'd definitely recommend the Rose Elliott books - other fav veg cook books to watch out for are anything by Nadine Abensur/Cranks, The Greens Cookbook (deborah madison) is great for more unusal but still 'realistic' food. The vegetarian society has some good recipes too www.recipes.vegsoc.org/
