I have MANY MANY potatoes - please inspire me!

I bought 2 packs of potatoes from ASDA on Tues, then I saw my Dad yesterday who gave me LOADS more from the allotment. I hate waste, but I'm lacking inspiration.

My DS has a wheat and cows milk allergy.

So far I have planned:

Jackets
mash
wedges
fishcakes with wheat free breadcrumbs

Can anyone else suggest more please?

Make roast potatoes and freeze them.

Tortilla - I will look that up as only think of taco (or is it what I think of as spanish omlette?)

Fish pie (espec if you have young kids).

. Mashed potatoes.
. Cheese sauce (with cows milk substitute).
. Some Coley (cheap but still as nice as cod).

Mix together or puree for very little ones and looking out for bones. Very nice served with peas.

Potato Gratin.

The good old Roast potato.

Shepherds pie topping.

Ooooh how old DS potato stamping with paints is fun for younger ones.

My kids are 3.5 and nearly 2. They would LOVE potato stamping. I however would become shrieky mum rocking in the corner. (We have a rented house). If the weather is nice I may consider it in the garden with many aprons, much kitchen roll and the dog locked clear out of sight.

Potato gratin - with a cream substitute?

Shepherds pie now on the list, along with roasties for the freezer, and fish pie. Thankfully we're past the puree stage.

Make a job lot of mash and freeze it - open freeze ice cream scoops of it, them grab what you need for shepherd's pie, fish pie etc etc. Can either be heated in microwave (for mash on the side) with a knob of butter (or what you can use) or defrost and then use for pies.

Make (in a roasting dish) a large pommes boulangere. Once cooked, cut into portions and freeze. Cook straight from the freezer for about 30 mins at 160 (or microwave, but nicer in oven)

Leek and potato soup

Rosti

Sauté potatoes with rosemary and garlic, open freeze and then bung in the oven to have with whatever.

Potatoes from the allotment should store really well. Put them somewhere cool, dry and dark. Use as needed.

Typically I dig mine up about now and they store until Christmas.

Bubble and squeak
Make mashed potato topped pies eg shepherds, fish pies and freeze
Peel, cut into chunks and parboil, toss in semolina and tray freeze ready for roast potatoes you can cook from frozen
Gnocchi if you are feeling ambitious!
Jamie Oliver has some good microwave recipes in 30 minutes series
Also you could make a spanish style stew with onion, chickpeas, chorizo and tinned tomatoes
or indian style bombay potatoes

Cheese and potato pie served with baked beans

Chips

Gnocchi which I love! Microwave them as jackets, cool, peel, grate, add some egg & flour, knead, roll out as sausage and cut into pillows! Boil 3 mins.

Fishcakes with tinned fish & spring onion

Any creamy or cheesy casserole type dish ( de-skin & chop sausage & leek with onion in cheesey sauce is fab) then parboil slices of potato skin on, layer up on top with bit grated cheese for a sort of bake casserole

A stew with potatoes cooked in it with dumplings

More chips!

instead of potato gratin you can make potato bolangerie (I have no idea how to spell it).

Thinly slice potatoes (as you would for a dauphinoises), you can add some thinly slice onion if you like. Arrange in dish in layers, cover in stock (a rich beef one is good) just about to the top. Bake in a low oven for a couple of hours. If you are doing a slow cooked joint of meat you can cook them together puttinig the meat directly ontop of the potatoes. Really nice.

Excess potatoes in fridge in garage. I can't imagine they'd keep until xmas would they???

Sneakybeak - they will be fine if they are kept in a cool, DARK place. Put them in a sack or enclosed box and they should easily last you until Christmas.

Cut potatoes into bite size pieces, boil potatoes until almost done, Cut up onion into big chunks, cut up garlic into little bits. Toss the potatoes in some oil with the onion and garlic.

potato farls

mashed Potatoes (4 potatoes)

2 ts of melted butter

1 cup of flour

Half ts of salt

4 ts of oil

mash spuds then add flour and salt
divide mixture into two
knead into a flatish round disc
quarter and griddle
