When I say veggie I don't just mean meat-free, I mean containing vegetables :) (ie not macaroni cheese etc)

Stir-fried veg with noodles

lentils, carrots and rice

moroccan vegetable taqgine with couscous (no fat in it at all, my recipe is int ehr ecipe section)

chickpea and veg curry with curry sauce made from scratch (not a jar or packet) using yoghurt and tomato puree and spices, garlic, chillie, onion etc etc

Roasted vegetables.

Vege and barley soup with tiger bread or light rye bread;
Lentil chilli with rice and a homemade salsa;
Lentil and chickpea tagine and cous cous or crusty bread and salad;
Vege and chickpea curry - current fave is to roast a pan of butternut squash and cauliflower then stick it in the curry with onions, frozen peas and wilted spinach;
Asparagus, artichoke, broad bean and frozen pea risotto;
Thai curry with loads of vege (but I cheat and use a paste).

I'm not Pearl but Jamile Oliver has a good stuffed squash recipe. Another nice one is to halve the squash, scoop out the seeds and slash the flesh then drizzle with a bit of olive oil and roast. Meanwhile fry some onions and garlic plus any other veggies you fancy. Mix this with cream cheese then use to stuff the almost cooked squash then just cook until bubbling.

I do a similar thing with halved, roast butternut squash but put a dollop of salsa on it and top with pinenuts and a little cheese.

Also love roasted sweet potato wedges which I serve with a mango salsa and yoghurt dip.

Couscous (soaked in veg stock and lime juice) with chopped avocado, red onion and tomatoes. With lots of coriander and maybe some salsa. Lovely.

veggie fajita, bung all the veg in a wok, peppers, tomatoes, aubergines, onions, garlic etc, add fajita sauce/powder then make up fajitas with cheese etc. yum. usually make it when have random veg. leave the cheese to make it low fat, use plain yog add salsa and guacmole, sorted.

here's the JO one. I have tweaked it in various ways and it always works well but it does need something quite sharp-tasting alongside it, such as a salad with a mustardy dressing or a salsa or something.

You cant beat pasta for a quick meal.

Salmon fillets 20 min in the oven, served with peas or brocolli and new potatoes, or rice or pasta.

overmydeadbody - I did your tagine yesterday - tasted delicious but I agree with some of the comments that the cooking time seems wrong - the veggies were still hard after 50 mins?

Ooohh, not the same as the one in my Bake book, but looks scrummy! The recipe I have is similar though, I stuff mine with ratatouille, but a mince-y bolognese-y type fillig is yum too. Thought of another recipe for you today - vegetable crumble! LOVE it (don't have a recipe as a friend's dad used to make it for us at uni) give it a google and see which one floats your boat :o

I use lentils, vegemince (realeat brand), spinach, tomato (tinned), corgette, onion, aubergine and mushroom to make a decent bolognaise. Soak the lentils first then add them to the frying onion, then chuck the rest in. I can turn it into chilli by substituting kidney beans for the lentils, throwing in some tabasco sauce and or paprika (I don't have chillis) and some peanut butter.

OMDB's tagine is awesome. I sweat the veg on the hob before putting in the oven and it always comes out cooked.

I made a lovely curry the other day - fry an onion, add about a tablespoon of curry paste, add a tin of chopped toms and a tin of chickpeas and simmer for about 20 mins. Sitr in a load of fresh spinach.

We just ate a beany pasta bake. Do a tomato sauce with whatever veg and beans you fancy, combine with cooked pasta. Add a breadcrumb and cheese topping and bake unti crispy. Not exactly haute cuisine but it's quick and easy and DS loves it.
