When I say veggie I don't just mean meat-free, I mean containing vegetables :) (ie not macaroni cheese etc)

My one vegetarian meal is bean burrito. Onion, chilli, pepper, chopped toms and a tin of mixed bean salad cooked together. Put in tortillas, cover in grated cheese and put in oven for 10 mins. Serve with sour cream.

Did the Jamie squash this eve (the one you linked to Remus) and it was delicious - DH doesn't normally go for veggie food but he loved it.

Onion celery tomato and garlic (basil, other herbs you fancy), peppers or mushroom if you like.........bung in microwave untill cooked then add a tin of chopped toms and warm through.

Add either:
Cooked pasta or tortellini,
or,
tin of chilli beans.

Quick easy and will be eaten by veggies and carnivores alike!

I have discovered a new and awesome way of making veggie chilli and will share it because I am feeling generous!

Use a huge pan that can go in the oven too.

Fry 2 chopped onions with two cloves of garlic and a few finely chopped carrots.
Add a good shake of paprika, a teaspoon or more of chilli flakes, a heaped teaspoon of cocoa powder and a teaspoon of thyme plus loads of black pepper and a teaspoon of chipotle paste.
Add a bottle of lager and some coffee (about two teaspoons of decent instant diluted in a bit of hot water).
Add a tub of passata and then fill the tub with water and add the water to the pan.
Add red lentils and puy lentils and shove in the oven for about 35 minutes (check if it needs more water).
Add a chopped red pepper or two (or green but dd1 moans if I use those!), and tinned beans - I like borlotti and butter beans (because dd1 moans about kidney beans!) and cook for another ten minutes or so.
Eat with soured cream, tortillas or tortilla chips, grated cheese and homemade guacamole or mango salsa (but dd1 moans if I don't make rice!).
It is awesome!

Yotam Ottolenghi's Chickpeas and spinach with honeyed sweet potato- looks much nicer than that photo and tastes divine.

His Herb pie is also good.

And his aubergine cheesecake

Butternut squash and sage risotto with toasted pine nuts.

Or taglietelle with butternut squash, sage butter, goats' cheese, green olives and fresh rocket.

I usually just use whatever veg we have (carrot, cauli, broccoli, sweetcorn etc.) and make a cheese sauce, then make a giant pasty and cut it into slices to serve.

You could also do curried veg.

You could throw anything in, really.

I saw a great looking recipe for a veggie pie the other day but can't remember where. It was in a spring form tin and essentially just involved layering loads of veggies inside a pastry case with s&p and herbs in between the layers. It looked lovely.

As does your pasta thing (except for the goats' cheese - blurgh!). How do you do the sage butter?

Another v quick thing is mushroom stroganoff but unfortunately neither of my dds will eat it and it's probably too fattening for this thread anyway.

Asparagus and artichoke and leek risotto is another of our favourites.

Pasta thing is lovely- works well without the cheese too, or you can substitute it with fontal or tallegio or even a bit of mozzarella.

I do the sage butter by frying chopped fresh sage leaves in butter (you can melt and strain the butter first if you want, but I don't bother), brown gently until leaves are crisp and then remove from heat and add some lemon juice.

I make dahl with cauliflower and then we have Omani salad (onion, big tomat and cucumber all chopped small) on the side, beetroot and feta cheese salad and pitta breads to dunk in the dahl, with rice.

The left over rice gets made into egg fried rice the following day with peas and sweetcorn and I use a little sherry and 5 spice and the salads come out again.
