Can you help me plan a lovely vegan, nut free lunch?

Our lovely friends are coming to lunch on Sunday and he is a vegan who does not eat nuts. I would love to give them something yummy and homemade- as they are travelling and could arrive any time I thought we would have nice bread, salad, maybe peppers stuffed with lentils? But what about a pudding? Can I make a cake with vegan margerine and no eggs? I am a complete meat eater so am really really stuck as I so want to make them feel welcome!

i make coconut rice pudding loads, it's delicious.

i just make it up as usual, but use coconut milk topped up with oat milk (or the milk of your choice)
add a little grated lemon zest and it's so nice

colditz · 29/06/2011 16:48

hey, did you see that? I just meal-planned my own nut free vegan dinner

colditz · 29/06/2011 16:49

Egs aren't dairy, they come from chickens, not cows, and don't contain milk. Honey is, basically, bee poo. Not from cows.

motherinferior · 29/06/2011 16:49

I linked to it, Colditz.

motherinferior · 29/06/2011 16:49

That was to rice pudding, not bee poo.

thisisyesterday · 29/06/2011 16:50

who said eggs were dairy?

thisisyesterday · 29/06/2011 16:51

oh and afaik honey isn't protein

colditz · 29/06/2011 16:52

"so non-vegans get meat products and dairy. wow. 2 whole extra things. amazing."

Was just pointing out that actually we get four, as neither honey nor eggs are either meat or dairy.

thisisyesterday · 29/06/2011 16:52

my point anyway, was that you can't say "oh a nut free vegan has only 2 sources of protein, whereas I have cow, duck, chicken, lamb" etc etc

if yo're counting ALL beans, pulses, legumes etc as ONE source then you have to count ALL meat as ONE source.

so non-vegans don't have that many extra sources of protein do they?

thisisyesterday · 29/06/2011 16:52

and honey isn't a bloody protein either. so i'll give you 3!

colditz · 29/06/2011 16:53

I was talking about food, and the difficulty of feeding a vegan nut free person. Not protein foods specifically (although eggs are an excellent source of complete protein)

thisisyesterday · 29/06/2011 16:54

argh i actually just laughed out loud at the fact that we're arguing over what is and isn't protein and how many different sources vegans and non-vegans have

I HATE THE INTERNET!!!

lol

this is me

motherinferior · 29/06/2011 16:54

OK. So vegans get:

  1. Pulses (and ensuing derivatives thereof)
  2. Nuts
  3. Grains (I remain unconvinced on this one but will yield on it, especially quinoa)
  4. Avocadoes

Meat-eaters get these PLUS:
5.Eggs

  1. Dairy
  2. Meat (I am including fish under meat although some would insist on a separate category).

Meat-eaters also get honey, but that isn't in the protein argument.

So vegans do get a range of four protein options, but meat-eaters get seven.

All of which obviously does not look at other arguments for eating or not eating meat.

colditz · 29/06/2011 16:54

Oh God TIY, that is so true.

colditz · 29/06/2011 16:56

Sorry MI, I'm just giggling now. At myself. I have vegan mates, FFS. I know they're healthy...... I must excuse myself and say that I have a scarred nerve, it's painful, and I'm being a wanker here so I'm not a wanker to my children

motherinferior · 29/06/2011 16:57

I might go and do some work. I am actually quite a nice and competent person in RL, you know.

colditz · 29/06/2011 16:59

I need to cook dinner.

Actually I really want coconut rice pudding, thank you for the link MI

BoojaBooja · 29/06/2011 16:59

Oh, everyone knows the vegan diet's the best!

Some great suggestions already here. Post Punk Kitchen's v. good for cake recipes.

Try the Viva! website too. vegetarianrecipeclub.org.uk/

colditz · 29/06/2011 17:00

Five minutes ago, I was actually googling the protein content of honey, do you realise that? (negligable, by the way)

thisisyesterday · 29/06/2011 17:00

am laughing so much now that the children are giving me strange looks.

i am liking the list M.I

i feel that avocadoes can't be a thing on their own can they? poor avocadoes. is avocado a fruit or what? are there other things like it that have protein in???

i can't help but feel that all we have established is that meat-eaters have more choice of protein. which we all already knew.

thisisyesterday · 29/06/2011 17:01

turns out an avocado is, technically, a berry.

who knew

thisisyesterday · 29/06/2011 17:02

oh ho.

and let's not forget that one form of protein that not all meat-eaters get, but many vegans enjoy

i'll say 3 words

spit or swallow?

colditz · 29/06/2011 17:05

EEEEEEEEWWWWWWWWWWWW

(I wonder what happens if you fry it? Does it congeal like egg white does?)

BoojaBooja · 29/06/2011 17:07

Just mash it into potato for that lovely, creamy consistency.

talkingnonsense · 29/06/2011 17:07

Well I couldn't really serve that for lunch... Maybe they need to be even better friends?!
